Whole Wheat Coffee Muffins // Muffins integrali al caffè

 I am not much of a baker because there are rules that have to be followed in order to get good results and because it is extremely hard to make a dessert that both tastes good and is healthy. But since I had some kefir left, I attempted at making muffins from scratch for the first time and I gotta say I'm pretty happy with the result.


These whole wheat coffee muffins may not be very appealing, but they don't taste as aggressive as they look at all. They actually have a very delicate coffee flavour followed by a hint of coconut, still you can taste that nutty flavour from the flour.


To make it refined sugars-free, I used a lot of coconut because it is naturally sweetened. There's a little bit of shredded coconut, a little bit of coconut butter and coconut oil which makes the recipe butter-free as well. And I pushed myself a little bit further, and I made it egg-free too, replacing the egg with a mixture of cornstarch and water.

And finally the kefir, this fermented milk from the Caucasus rich in lactic acid bacteria and probiotics that is extremely healthy and with some baking soda won't only replace the milk but the baking powder as well.


INGREDIENTS
4 muffins
  • 75 g (1/2 cup) whole wheat flour
  • 120 ml (1/2 cup) kefir
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground coffee
  • 1 tablespoon fine shredded unsweetened coconut
  • 1/2 tablespoon cornstarch
  • 2 teaspoons coconut butter
  • 1 teaspoon coconut oil
  • Salt

INSTRUCTIONS
  • Preheat the oven to 180°C (350°F).
  • In a bowl, combine the kefir and baking soda, give it a stir and let it sit for a couple minutes, until it swells.
  • Mix the cornstarch with a tablespoon of water and add it into the kefir mixture. Add the melted coconut butter and oil, and stir.
  • In another bowl, combine the flour, ground coffee, shredded coconut, and a pinch of salt. Then add it to the kefir.
  • Fill 4 muffin tins and bake for 20-25 minutes, or until a toothpick in the middle comes out clean.
  • Remove from the oven and let the muffins cool down on a wire rack.


Non sono una grande amante della pasticceria perché ci sono regole che devono essere seguite per ottenere buoni risultati e perché è estremamente difficile creare un dolce che sia buono e sano allo stesso tempo. Ma dal momento che mi era avanzato del kefir, ho tentato di fare dei muffins da zero per la prima volta e devo dire che sono abbastanza soddisfata del risultato.

Questi muffins integrali al caffè possono non essere molto invitanti, ma non hanno un sapore aggressivo come sembrerebbe. In realtà hanno un sapore molto delicato di caffè seguito da un retrogusto di cocco, però si sente il sapore ricco della farina.

Per farli senza zuccheri raffinati, ho utilizzato tanto cocco perché è naturalmente dolce. C'è un po' di cocco grattugiato, un po' di purea di cocco e olio di cocco che rende la ricetta anche priva di burro. E mi sono spinta ulteriormente oltre, e li ho fatti senza uova, sostituendo l'uovo con un mix di maizena e acqua.

E infine il kefir, questo latte fermentato proveniente dal Caucaso ricco di fermenti lattici e probiotici che è estremamente salutare il quale, con un po' di bicarbonato, non solo sostituisce il latte ma anche il lievito in polvere.

INGREDIENTI
4 muffins
  • 75 g farina integrale
  • 120 ml kefir
  • 1/2 cucchiaino bicarbonato 
  • 2 cucchiaini caffè macinato
  • 1 cucchiaino granella di cocco
  • 1/2 cucchiaio maizena
  • 2 cucchiaini purè di cocco
  • 1 cucchiaino olio di cocco
  • Sale

PROCEDIMENTO
  • Preriscaldate il forno a 180°C.
  • In una ciotola unite il kefir e bicarbonato, mescolate e lasciate riposare per un paio di minuti, finché non si è gonfiato.
  • Mescolate la maizena con un cucchiaio di acqua e aggiungetelo nel composto di kefir. Aggiungete il burro e l'olio di cocco sciolti, e mescolate.
  • In un'altra ciotola mescolate la farina, caffè, granella di cocco e un pizzico di sale. Quindi aggiungeteli al composto di kefir.
  • Riempite 4 stampini da muffin e cuocete per 20-25 minuti, o finché uno stuzzicadenti inserito al centro uscirà pulito.
  • Sfornate, sformate e lasciate raffreddare i muffins su una gratella.
