Since those raw carrot cake bites I made a while ago turned out to be a great snack because a, they were refreshing, b, they were delicious and c, they were ready to be eaten, I decided to make more. Not more carrot cake bites, more bites. And, since I had already tested the coconut and beet pairing in the past, I went with those two. Needless to say, they were delicious.

After making the Mexican quinoa salad, I felt the urge to make a Greek inspired salad. This time around I decided to go with couscous as it is the only grain I have that doesn't require any cooking. Which is crucial with this heat. Unless you want to melt like a popsicle under the sun.

Happy Bastille Day! Or as French would say, Bonne Fête Nationale! Or is it Joyeux 14 Juillet? I should probably know since I'm half French. Anyway, for this very reason, as a way to celebrate this festive day, I made ratatouille. No, I am not talking about the Disney movie. Although the mouse did cook ratatouille. And it looked way prettier than mine.

This is that time of the year my grandfather brings me crates full of apricots. Now, I've never been an apricot person. I always liked peaches better. But nothing tastes as good as homegrown fruit and vegetables, so if I have to pick between store-bought peaches and homegrown apricots, I'll always pick the latter. Which is why I've been eating apricots like crazy lately. Mostly as a snack.

My vegetable garden is finally producing a lot of vegetables. Beetroots, carrots, zucchini. And eggplant, of course. And the easiest way - and my favourite - is to roast them. But there's also another way I love eating my vegetables, and that's making noodles out of them. And that's exactly what I did with my first eggplant.

A while ago, I wanted to eat coconut shrimps but I really wasn't in the mood to measure everything and write the recipe. I just wanted to make something simple and fast because I was hungry.
