Pasta Salad with Basil Goat Cheese Sauce and Roasted Beet // Insalata di pasta con salsa al basilico e formaggio di capra e barbabietola arrostita

Turns out I actually like love pasta. If not, why would I be making tons of pasta salads? They are even more time-consuming than regular, warm pasta. So I guess it's love after all.

That said, the real star of this dish is not the pasta but everything else. Roasted vegetables, herbs and cheese, how could that combination fail? It has everything it needs to be delicious. The sweetness from the roasted beets - I'm harvesting so many this year, it would be a shame not to use them! -, the fresh and aromatic basil and the delicious and creamy goat cheese, my latest obsession.


How to say no to that?

P.S. Do not add the sauce until you are ready to eat if you want a better-looking salad. Which of course is not what I did.

INGREDIENTS
1 serving
  • 80 g (2.8 oz) short cut pasta (I used whole wheat fusilli)
  • 1 medium raw beet
  • 50 g (1/4 cup) creamy goat cheese
  • 1 handful fresh basil leaves
  • 1 tablespoon lemon juice
  • Extra virgin olive oil
  • Salt

INSTRUCTIONS
  • Preheat the oven to 200°C (400°F). Place the beet in a large square of foil, brush it with some oil, season with salt and wrap it tightly. Cook for about 40 minutes, until the beet is tender. Allow to cool down, then cut into cubes. You can remove the skin if you want to.
  • Meanwhile, bring to a boil a pot of salted water and cook the pasta according to the package. Drain, cool down under cold running water and move it to the fridge.
  • In a blender, add goat cheese, basil and lemon juice and blend until smooth. Adjust salt, if needed.
  • Right before serving, place all the in a large bowl, toss to combine and serve.


A quanto pare mi piace amo la pasta. Altrimenti per quale motivo starei facendo un sacco di insalate di pasta? Ci vuole anche più tempo della pasta classica e calma. Quindi dopotutto credo sia amore.

Detto questo, la vera star di questo piatto non è la pasta ma tutto il resto. Verdure arrostite, erbe e formaggio, come potrebbe fallire questa combinazione? Ha tutto quello che serve per essere deliziosa. La dolcezza delle barbabietole arrostite - ne sto raccogliendo così tante quest'anno che sarebbe un peccato non utilizzarle! -, il fresco e armoatico basilico e il delizioso e cremoso formaggio di capra, la mia ultima ossessione.

Come dire di no?

P.S. Non aggiungete la salsa finché non siete pronti per mangiare se volete un'insalata più bella. Che ovviamente non è quello che ho fatto io.

INGREDIENTI
1 porzione
  • 80 g pasta corta (io ho utilizzato fusilli integrali)
  • 1 barbabietola media cruda
  • 50 g formaggio di capra cremoso
  • 1 manciata foglie basilico fresco
  • 1 cucchiaio succo di limone
  • Olio extravergine di oliva
  • Sale

PROCEDIMENTO
  • Preriscaldate il forno a 200°C. Mettete la barbabietola in un grande quadrato di carta alluminio, spennellatela con dell'olio, salate e richiudetela strettamente. Cuocete per circa 40 minuti, finché la barbabietola non è tenera. Fate raffreddato, quindi tagliate a cubetti. Potete rimuovere la buccia se volete.
  • Nel frattempo, portate a bollore una pentola di acqua salata e cuocete la pasta secondo quanto indicato sulla confezione. Scolatela, fatela raffreddare sotto acqua fredda corrente e mettetela in frigo.
  • In un frullatore, aggiungete formaggio di capra, basilico e succo di limone e frullate finché non sarà omogeneo. Aggiustate di sale, se necessario. 
  • Prima di servire, mettete tutti gli ingredienti in una grande ciotola, mescolate bene e servite.
