Corn and Octopus Soup // Zuppa di mais e polpo

I think it was around January when I became obsessed with making a corn and octopus soup. I don't know what's the reason behind my obsession, but I do know that I really wanted to make it. And I did make it, but it was terrible.

Not terrible flavour-wise, that was pretty good, but terrible look-wise because I had the brilliant idea of using a whole pre-cooked corn ear. The problem is that it was super mushy and when I scraped the kernels off, they looked terrible. But I made the soup anyway because I still needed to have lunch. And the flavour was good, so I told myself that I would remake it, maybe with canned corn this time.


And here I am, seven months later with a completely different recipe. The ingredients are the same minus the olive oil, but it's quicker to make. It's sweetish and fresh, and a great way to enjoy octopus during Summer.


INGREDIENTS
1 serving
  • 110 g (3/4 cup) drained canned corn
  • 130 g (1 1/2 cup) frozen chopped octopus, defrosted
  • 1/4 onion
  • Fresh parsley
  • Salt

INSTRUCTIONS
  • Bring to a boil a pot of lightly salted water, add the octopus, return to a boil and cook for 20 minutes. Drain it, reserving the water. Let cool down. 
  • In a blender, add 75 g (1/2 cup) of corn, 120 ml (1/2 cup) of the cooking water, the onion and blend until smooth. Adjust salt if needed.
  • Pour in a bowl, add the octopus and remaining corn and stir well.
  • Serve with fresh minced parsley either at room temperature or refrigerated.


Credo fosse intorno gennaio quando sono diventata ossessionata col fare una zuppa di mais e polpo. Non so qual è la ragione dietro la mia ossessione, ma so che volevo veramente farla. E l'ho fatta, ma era orribile.

Non terribile di sapore, quello era molto buono, ma terribile di aspetto perché ho avuto la brillante idea di utilizzare una pannocchia intera precotta. Il problema è che era super molliccia e quando ho raschiato i chicchi, avevano un aspetto terribile. Ma ho fatto la zuppa lo stesso perché dovevo comunque pranzare. E il sapore era buono, così mi sono detta che l'avrei rifatta, forse con mais in scatola questa volta.

Ed eccomi qui, sette mesi dopo con una ricetta completamente diversa. Gli ingredienti sono gli stesso meno l'olio di oliva, ma è più veloce da fare. È dolciastra e fresca, e un ottimo modo per gustare il polpo durante l'estate.

INGREDIENTI
1 porzione
  • 110 g mais in scatola scolato
  • 130 g polpo a pezzi congelato, scongelato
  • 1/4 cipolla
  • Prezzemolo fresco
  • Sale

PROCEDIMENTO
  • Portate a bollore una pentola di acqua leggermente salata, aggiungete il polpo, fate riprendere il bollore e cuocere per 20 minuti. Scolatelo, tenendo da parte l'acqua. Fate raffreddare.
  • In un frullatore, aggiungete 75 g di mais, 120 ml dell'acqua di cottura, la cipolla e frullate finché non sarà omogeneo. Aggiustate di sale se necessario.
  • Versate in una ciotola, aggiungete il polpo e mais rimasto e mescolate bene.
  • Servite con prezzemolo fresco tritato a temperatura ambiente o refrigerata.
