Shrove Tuesday is just around the corner and traditions have people from a lot of different countries celebrating with costume parties and a lot of deep fried sweets. I'm not going to lie, I'm a huge fan of the deep fried sweets part and, although I follow a healthy lifestyle, I don't deprive myself of those. It happens once a year after all.

Three, maybe four years ago I became obsessed with instant ramen. At the time I really loved that stuff. Then I slowly started to notice that it didn't taste that good and I start throwing the flavour package away and seasoned the noodles with whatever I wanted. But that was before.

I've never mentioned it before but I am a huge comic books fan. So at the end of October last year, I went to Lucca for the Lucca Comics & Games, an annual comic book and gaming convention. The event was fantastic, but since I had never been there before I was also interested in seeing the city and eating some typical food.

It has been getting warmer during the past couple of days. Kinda. So I don't have anymore the need to eat super hot foods to warm me up. But it isn't still hot enough to eat cold or room temperature foods. What I'm trying to say is that risottos fit perfectly.

Carbonara was one of my favourites growing up. It wasn't the carbonara everybody knows (and love), though. It was spaghetti with pancetta and... scramble eggs! I know, that's not a carbonara, but that's the way my mother used to make it because my father doesn't like rawish eggs.

I eat salmon about once a week. Sometimes it's a fancy recipe made by my mother, sometimes it's a simple skillet salmon and it's made by me. Some other times I also feel like making fancy and visually stunning dishes, and I try to combine the aesthetic with unusual food combinations.

A while ago, after spending too much time cleaning chicken liver, I sautéed some onion, added the liver and cooked it. I season the whole thing with some fresh thyme and chili and blend it with a little olive oil. And voilà, my healthy pâté was ready to eat. There was only one problem though, it was a lot of paté so I decided to divide it into portions and freeze it.

Kumquats are my favourite winter fruit. They have a sweet zest and a juicy and slightly bitter inside which is very unusual for citrus fruits, but that's why I love them, they basically say "don't judge a book by its cover".

I'm the one-dish meal kind of person. I love having my carbs, proteins, fats and vegetables all in the same dish because that way I can make my food a lot more flavourful. On weekends, however, my mother usually cooks, and since there's usually a lack of vegetables on the table, I cook them.
