Mixed Roasted Vegetables // Verdure miste arrostite

Temperatures have dropped a little – it’s still pretty hot though – which makes this the perfect moment to share with you my favorite Summer “recipe”, mixed roasted vegetables.


This is easily my favourite way to cook vegetables because they don’t need a lot of attention. You can use whatever vegetable you have or want – carrots, beets, zucchini, eggplants, bell peppers, etc. –, add a little olive oil and some herbs if you want and they always turn out delicious. My favourite combination at the moment is this, beet, eggplant and zucchini, mainly because there’s plenty of them in my garden. Although a couple of weeks ago’s hail did no good to them.


That said, this side dish is so delicious, you won’t even mind turning on the oven on hot days. Because, if I have to be completely honest with you, I’ve been roasting vegetables for a month now. What can I say, heat is a price I’m willing to pay for delicious roasted vegetables. What about you?

INGREDIENTS
4 servings
  • 2 beetroots
  • 1 big eggplant
  • 1 large zucchini
  • 1 teaspoon dried basil
  • 1-2 tablespoons extra virgin olive oil
  • Salt

INSTRUCTIONS
  • Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper and set aside.
  • Dice the vegetables, making the beet dices a little bit smaller than the others. Move to the baking sheet, add the dried basil and olive oil, and mix well to combine.
  • Roast in the oven for 40-45 minutes. Season with salt at the end.

Le temperature sono scese un po’ – però è ancora abbastanza caldo – il che fa di questo il momento perfetto per condividere con voi la mia “ricetta” estiva preferita, le verdure miste arrostite.

Questo è facilmente il mio modo preferito per cucinare le verdure perché non hanno bisogno di tanta attenzione. Potete utilizare qualsiasi verdura avete o volete – carote, barbabietole, zucchine, melanzane, peperoni, etc. -, aggiungere un po’ di olio di oliva ed alcune erbe se volete e sono sempre buonissime. La mia combinazione preferita al momento è questa, barbabietola, melanzana e zucchina, principalmente perché ce ne sono tante nel mio orto. Anche se devo dire che la grandine di un paio di settimane fa non ha fatto per niente bene.

Detto questo, questo contorno è così gustoso che non vi dispiacerà neanche accendere il forno nei giorni caldi. Perché, se devo essere completamente onesta, ho arrostito verdure per un mese. Che posso dire, il caldo è un prezzo che sono disposta a pagare per delle deliziose verdure arrostite. E voi?

INGREDIENTI
4 porzioni
  • 2 barbabietole
  • 1 melanzana grande
  • 1 zucchina grande
  • 1 cucchiaino basilico secco
  • 1-2 cucchiai olio extravergine di oliva
  • Sale


PROCEDIMENTO
  • Preriscaldate il forno a 220°C. Foderate una teglia con carta da forno e mettete da parte.
  • Tagliate le verdure in cubi, facendo quelli di barbabietola un po’ più piccoli. Trasferite nella teglia, aggiungete il basilico secco e l’olio di oliva, e mescolate bene.
  • Cuocete in forno per 40-45 minuti. Salate alla fine.
