Tagliatelle with Mushrooms // Tagliatelle ai funghi

I've never mentioned it before but I am a huge comic books fan. So at the end of October last year, I went to Lucca for the Lucca Comics & Games, an annual comic book and gaming convention. The event was fantastic, but since I had never been there before I was also interested in seeing the city and eating some typical food.

But I'm not good at picking restaurants. Or maybe I'm not just good at picking from the menu, because, while the others had a fine lasagna, I was stuck with some terrible tagliolini with mushrooms. The tagliolini were 2-3 cm thick and looked more like maltagliati. The cook probably didn't stir much because most of them were glued together and some were raw. The mushrooms were just as big as the "tagliolini". A terrible experience.


So a lot of months later, since my mother made fresh pasta, I decided to make my own version of that recipe, hoping that it would look and taste better. And so it was.

I eventually ended up making tagliatelle instead because I cut the too thick, but it's okay because I actually like them better. And I used button mushrooms because porcini are too intense for me, but feel free to use those. Or any mushroom you like.


INGREDIENTS
1 serving
  • 130 g (4.6 oz) fresh tagliatelle or 75 g (2.6 oz) dried tagliatelle
  • 100 g (1 1/2 cup) sliced button mushrooms
  • 1 garlic clove
  • 1 handful fresh parsley, minced
  • 1/2 tablespoon extra virgin olive oil
  • Salt
  • Coarse salt
  • Black Pepper

INSTRUCTIONS
  • Bring to a boil a pot of salted water and boil the pasta for 5-6 minutes, or according to the package if dry.
  • Meanwhile, add the oil and peeled garlic clove in a pan and heat on low heat. Add the mushrooms, season with salt and pepper and cook, stirring occasionally, for 10 minutes. Keep warm.
  • Move the pasta to the pan, add some cooking water, turn on the heat on low and stir to combine.
  • Add the minced parsley and some cooking water, if needed, so to reach the desired creaminess.
  • Serve.


Non l'ho mai detto prima ma sono una grande fan dei fumetti. Per questo alla fine di ottobre dello scorso anno sono andata a Lucca per il Lucca Comics & Games, una fiera annuale dedicata ai fumeti e videogiochi. L'evento è stato fantastico, ma dato che non ci ero mai stata prima, ero anche interessata a vedere la città e provare dei piatti tipici.

Ma non sono brava a scegliere i ristoranti. O forse solamente non sono brava a scegliere dal menù perché, mentre gli altri hanno mangiato una discreta lasagna, io sono rimasta con dei terribili tagliolini ai funghi. I tagliolini erano larghi 2-3 cm e sembranano più maltagliati. Il cuoco probabilmente non aveva mescolato molto perché la maggior parte era incollata e alcuni erano crudi. I funghi erano grandi come i "tagliolini". Un'esperienza terribile.

Quindi dopo tanti mesi, dato che mia madre aveva fatto della pasta fresca, ho deciso di creare la mia versione di quella ricetta, sperando che avrebbe avuto un aspetto e un sapore migliore. E così è stato.

Alla fine ho fatto le tagliatelle perché ho tagliato la pasta troppo spessa, ma va bene dal momento che le preferisco. E ho utilizzato i funghi champignon perché i porcini hanno un sapore troppo forte per me, ma sentitevi liberi di utilizzarli. O di utilizzare un qualsiasi altro fungo.

INGREDIENTI
1 porzione
  • 130 g tagliatelle fresche o 75 g tagliatelle secche
  • 100 g funghi champignon tagliati a fette
  • 1 spicchio aglio
  • 1 manciata prezzemolo fresco, tritato
  • 1/2 cucchiaio olio extravergine di oliva
  • Sale
  • Sale grosso
  • Pepe nero

PROCEDIMENTO
  • Portate a bollore una pentola di acqua salata e bollite la pasta per 5-6 minuti, o a seconda della confezione se secca.
  • Nel frattempo, aggiungete l'olio e aglio spellato in una padella e scaldateli su fiamma bassa. Aggiungete i funghi, salate e pepate e cuocete, mescolando di tanto in tanto, per 10 minuti. Tenete in caldo.
  • Trasferite la pasta nella padella, aggiungete un po' di acqua di cottura, accedente la fiamma al minimo e mescolate per amalgamare.
  • Aggiungete il prezzemolo tritato e un po' acqua di cottura, se necessaria, così da ottenere la cremosità desiderata.
  • Servite.

  5. Anche io avrei scelto le tagliatelle: i tagliolini li abbinerei più volentieri a sughi pià cremosi. Il tuo piatto è certamente buonissimo....neanche lontanamente parente di quello che hai mangiato al ristorante!
