Coconut Shrimps // Gamberi al cocco

A while ago, I wanted to eat coconut shrimps but I really wasn't in the mood to measure everything and write the recipe. I just wanted to make something simple and fast because I was hungry. And so did I. And they looked pretty good too so I decided to share a picture on Snapchat. One of my friends there, Nadine, saw them and asked for the recipe.

And I just couldn't say no to her also because those shrimps were beyond delicious. So weeks later, here I am, sharing with you arguably the easiest coconut shrimps recipe you will ever find. Two ingredients are all it takes.


And those two ingredients are shrimps, duh, and coconut butter. There's also some ghee and salt, but I don't really consider them as ingredients. Anyway, if you don't have coconut butter at home, it's not a problem. In that case, all you need is some unsweetened shredded coconut and a food processor. Simply add the coconut in the food processor and blend until it has a buttery consistency.


All you then have to do is melt the butters in a pan, add the shrimps and cook them for a couple of minutes. And if you want to bring them to the next level, season them with smoked sea salt. I find that that smoky flavour goes very well with the sweetness of the coconut.

INGREDIENTS
1 serving
  • 10 (about 190 g // 6.7 oz) shrimps
  • 1 tablespoon of coconut butter
  • 1 teaspoon of ghee (or coconut oil)
  • Smoked Cyprus sea salt

INSTRUCTION
  • Peel the shrimps then devein them.
  • Add the ghee and coconut butter in a pan and heat them over medium heat, stirring to combine.
  • Add the shrimps and cook for a couple of minutes, until the shrimps are pink and cooked through, stirring to evenly coat them with the butters.
  • Season with salt and serve.


Un po' di tempo fa avevo voglia di mangiare i gamberi al cocco ma non avevo nessuna voglia di misurare gli ingredienti e scrivere la ricetta. Volevo fare qualcosa di semplice e veloce perché avevo fame. E così ho fatto. Ed avevano un bell aspetto così ho deciso di condividere una foto su Snapchat. Una delle mie amiche, Nadine, li ha visti e mi ha chiesto la ricetta.

E non potevo dirle di no anche perché quei gamberi erano più che delizioso. Così settimane più tardi, eccomi a condividere con voi probabilmente la più semplice ricetta di gamberi al cocco che troverete. Ci vogliono soltanto due ingredienti.

E quei due ingredienti sono gamberi, ovviamente, e burro di cocco. C'è anche del burro chiarificato e sale, ma non li considero ingredienti. Comunque sia, se non avete il burro di cocco in casa, non è un problema. In quel caso, tutto ciò di cui avrete bisogno è del cocco grattugiato e un robot da cucina. Basta aggiungere il cocco nel robot da cucina e frullare finché non ha raggiunto una consistenza burrosa.

Tutto quello che dovrete poi fare è sciogliere i burri nella padella, aggiungere i gamberi e cuocerli per un paio di minuti. E se volete portarli al livello successivo, salateli con sale affumicato. Secondo me quel sapore affumicato sta benissimo con la dolcezza del cocco.

INGREDIENTI
1 porzione
  • 10 (circa 190 g) gamberi
  • 1 cucchiaio burro di cocco
  • 1 cucchiaino burro chiarificato (o olio di cocco)
  • Sale affumicato di Cipro

PROCEDIMENTO
  • Sgusciate ed eviscerate i gamberi.
  • Aggiungete il burro chiarificato e burro di cocco in una padella e scaldateli su fiamma media, mescolando per amalgamarli. 
  • Aggiungete i gamberi e cuocete per un paio di minuti, finché i gamberi non sono rosa e cotti, mescolando per ricoprirli uniformemente con i burri.
  • Salate e servite.
