Apricot Bites with Goat Cheese and Pistachios // Bocconcini di albicocca con formaggio di capra e pistacchi

This is that time of the year my grandfather brings me crates full of apricots. Now, I've never been an apricot person. I always liked peaches better. But nothing tastes as good as homegrown fruit and vegetables, so if I have to pick between store-bought peaches and homegrown apricots, I'll always pick the latter. Which is why I've been eating apricots like crazy lately. Mostly as a snack.

Since I'm not the biggest fan of apricots, after a while I got bored of eating them plain. And that's when I decided to fill them with some leftover creamy goat cheese and drizzle them with honey. Well, they were good, but something was missing. Something crunchy. Only after several experiments, I came up with the perfect combination, that being goat cheese, honey and pistachios.

These apricot bites are truly delicious. They are sweet and salty, and they are perfect as a snack. Or as an appetiser. I'm sure they'll blow away your guests.

INGREDIENTS
10 bites
  • 5 apricots, halved and pitted
  • 50 g (1/4 cup) creamy goat cheese
  • 5 g (1 tablespoon) shelled pistachios, chopped
  • Honey

INSTRUCTIONS
  • Place the apricots on a plate.
  • With a teaspoon, fill each apricot half with some of the goat cheese.
  • Top with the chopped pistachios, drizzle with honey and serve.


È quel periodo dell'anno quando mio nonno mi porta ceste piene di albicocche. Ora io non sono mai stata il tipo da albicocche. Ho sempre preferito le pesche. Ma non c'è niente di buono come la frutta e verdura di casa, così se devo scegliere tra le pesche del negozio e le albicocche di casa, sceglierò sempre queste ultime. Ed è per questo che ultimamnete ho mangiato tantissime albicocche. Per lo più come snack.

Dato che non sono una grande fan delle albicocche, dopo un po' mi sono stancata di mangiarle così come sono. Ed ecco quando ho deciso di farcirle con del formaggio di capra cremoso avanzato e completare con del miele. Beh, erano buone, ma mancava qualcosa. Qualcosa di croccante. Solo dopo diversi esperimenti, ho trovato la combinazione perfetta, cioè formaggio di capra, miele e pistacchi.

Questi bocconcini di albicocca sono veramente deliziosi. Sono dolci e salati, e sono perfetti come snack. O come antipasto. Sono sicura che lascierà i vostri ospiti a bocca aperta.

INGREDIENTI
10 bocconcini
  • 5 albicocche, tagliate a metà e senza nocciolo
  • 50 g formaggio di capra cremoso
  • 5 g pistacchi sgusciati, spezzettati
  • Miele

PROCEDIMENTO
  • Mettete le albiccocche in un piatto.
  • Con un cucchiaino, riempite ogni metà di albicocca con del formaggio di capra.
  • Completate con i pistacchi spezzettati e miele, quindi servite.
