Roasted Turnips // Rape arrosto

A while back I said I like my turnips simply roasted with some fresh thyme and coconut oil. Why coconut oil you ask? Because it adds this sweet, exotic flavour that works perfectly with turnips. At least it does for me.

This time I decided to do something fancier, and I served them with a greek yogurt dipping sauce. Since the sauce kind of covers the taste of coconut oil I used olive oil instead. But you could totally skip the sauce, and use coconut oil. Seriously, feel free to do whatever you like the best.

This dish, you can either have it as a main dish and eat it all by yourself, or as a side dish. In that case, I'm afraid you will have to share with somebody.

INGREDIENTS
  • 4 turnips
  • Extra virgin olive oil
  • Fresh thyme
  • Himalayan salt
  • Pepper
  • 80 g (1/3 cup) Greek yogurt 
  • 2 teaspoons lemon juice
  • 4 mint leaves

INSTRUCTIONS
  • Preheat the oven at 190°C (375°F). 
  • Wash the turnips, cut off the top and the bottom, and peel them. Cut them into thick slices. Toss them in a bowl with a bit of olive oil. Place the turnips on a parchment-lined baking sheet, put a little bit of himalayan salt on top, a bit of pepper, and your thyme (or herbs of your choice). Put them in the oven, for 22-25 minutes, until fork tender.
  • Meanwhile, mix the Greek yogurt with lemon juice, and minced mint leaves, and serve once the turnips are done.


Un po' di tempo fa ho detto che mi piacciono le rape semplicemente arrostite con timo fresco e olio di cocco. Perché l'olio di cocco? Perché aggiunge un tocco dolce ed esotico che si abbina perfettamente con le rape. Almeno funziona per me.

L'ultima volta ho deciso di fare qualcosa di più raffinato, e le ho accompagnate con una salsa allo yogurt greco. Dato che la salsa copre il sapore dell'olio di cocco, questa volta ho utilizzato olio di oliva. Potete benissimo saltare la sala e usare l'olio di cocco. Sentitevi liberi di fare come preferite.

Questo piatto può essere servito sia come piatto unico e mangiarlo tutto da soli, o come contorno. In questo caso temo che dovrete condividerlo.

INGREDIENTI
  • 4 rape
  • Olio extravergine di oliva
  • Timo fresco
  • Sale rosa dell'Himalaya
  • Pepe
  • 80 g yogurt greco
  • 2 cucchiaini succo di lime
  • 4 foglie di menta

PROCEDIMENTO
  • Preriscaldate il forno a 190°C. 
  • Lavate le rape, tagliate la parte superiore e inferiore, e pelatele. Tagliatele in fette spesse. Mettetele in una ciotola, unite un po' di olio e mescolate bene. Disponete le rape su una teglia con carta da forno, aggiungete un po' di sale, pepe e il timo (o erbe aromatiche di vostra scelta). Infornate e cuocete per 22-25 minuti, finché saranno tenere.
  • Nel frattempo mescolate lo yogurt con il succo di lime, e le foglie di menta tritate, e servite con le rape.
