Corn, Zucchini and Pea Quinoa // Quinoa con mais, zucchine e piselli

On my last trip to the grocery store I bought zucchini. What I had in mind was to grill and put them on pizza, or use them instead of bacon in a vegan version of spaghetti alla carbonara. Well, turned out I was not in the mood for pizza, or pasta, so I went with one of my favourites, quinoa.

What I love the most about quinoa, other than all of its nutrients, is that you can pair it with whatever you want, and I assure you this corn, zucchini and pea combo is wonderful, and the fresh kick the lime adds to them makes this dish enjoyable even on the hottest days.


INGREDIENTS
1 serving
  • 60 g (1/4 cup) uncooked quinoa
  • 80 g (1/3 cup) corn (I used canned kernels)
  • 50 g (1/3 cup) frozen peas
  • 1/2 zucchini
  • 2 tablespoons lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon flax seeds
  • 1 teaspoon pumpkins seeds
  • 1/2 tablespoon extra virgin olive oil
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS
  • Rinse the quinoa with cool water and drain. Add the quinoa in a saucepan, stir in 120 ml (1/2 cup) of water and a pinch of salt. Bring to a boil, lower the heat to low, and cook, covered, for 15 minutes. Remove the pot from the heat and let stand for 5 minutes, then fluff the quinoa gently with a fork.
  • Cut the zucchini into 4 pieces through the length, then slice it. 
  • After 10 minutes of cooking the quinoa, heat the olive oil in a large skillet over medium-high heat. Add the frozen peas and saute for about 2 minutes. Add the zucchini and cook for 3 minutes, then add the corn and saute for 2 minutes. 
  • At this point your quinoa should be cooked and rested. So toss in the quinoa, the lime juice and zest, the seeds, and salt and pepper to taste. Serve warm.

NOTES
  • Fresh peas will work just as fine. In that case, you can add peas and zucchini at the same time: your peas won't lose water, they are not frozen.


L'ultima volta che sono andata al supermercato ho comprato delle zucchine. Quello che avevo in mente era di grigliarle e metterle sulla pizza, o di utilizzarle al posto del bacon in una versione vegana degli spaghetti alla carbonara. Alla fine non ero in vena né di pizza né di pasta, così ho optato per uno dei miei cibi preferiti, la quinoa.

Ciò che mi piace maggiormente della quinoa, oltre a tutti i suoi nutrienti, è che puoi abbinarla con qualsiasi cosa, e vi assicuro che questa combinazione di mais, zucchine e piselli è fantastica, e la freschezza aggiunta dal lime rende questo piatto piacevole anche nelle giornate più calde.

INGREDIENTI
1 porzione
  • 60 g quinoa
  • 80 g mais
  • 50 g piselli congelati
  • 1/2 zucchina
  • 2 cucchiai succo di lime
  • 1 cucchiaino scorza di lime
  • 1 cucchiaino semi di lino
  • 1 cucchiaino semi di zucca
  • 1/2 cucchiaio olio extravergine di oliva
  • Sale
  • Pepe nero macinato al momento

PROCEDIMENTO
  • Sciacquate la quinoa con acqua fredda e scolatela. In una pentola, aggiungete la quinoa, 120 ml di acqua e un pizzico di sale. Portare a bollore, abbassate la fiamma al minimo, e cuocete, coperto, per 15 minuti. Togliete dal fuoco e fate riposare per 5 minuti, quindi sgranate gentilmente la quinoa con una forchetta.
  • Tagliate la zucchina in quattro per la lunghezza, e poi affettatela. 
  • Dopo 10 minuti di cottura della quinoa, scaldate l'olio in una capiente padella su fiamma medio-alta. Aggiungete i piselli concelati e cuocete per circa 2 minuti. Aggiungete la zucchina e cuocete per 3 minuti, quindi aggiungete il mais e cuocete per altri 2 minuti.
  • A questo punto la quinoa dovrebbe essere cotta ed aver riposare. Quindi aggiungetela nella padella insieme al succo e scorza di lime, i semi, e sale e pepe, a piacere. Servite calda.

NOTE
  • I piselli freschi andranno bene lo stesso. In questo caso, potete aggiungete i pieselli e la zucchina allo stesso momento: i piselli non perderanno acqua in quanto non sono congelati.

    1. È per questo che preferisco la cucina salata al dolce, è molto più facile utilizzare gli ingredienti, soprattutto se avevi già qualcosa in mente ma poi cambi idea.

    I love the combination of flavors in your quinoa dish. I bet the zucchinni would have been good grilled and added to pizza or pasta but, just look at all the healthy goodness in this dish. Delightful!

    1. I eventually grilled some zucchini and attempted to make a gluten-free pizza but it was raw in the center, so I won't post the recipe. But the grilled zucchini were fabulous!
