Avocado Banana Brownies // Brownies all'avocado e banana

I have a sweet tooth but unfortunately desserts are quite the opposite of being healthy. Most of the time they are a caloric bomb, loaded with unhealthy fats and sugars. Especially sugars.

Other than desserts, I love brownies, so I thought I would make, or at least try to, a healthier version of the traditional recipe. And after a few attempts, I came up with this flourless, sugar, egg and dairy-free recipe.

INGREDIENTS
12 brownies
  • 105 g (1/2 cup) black beans, rinsed and drained, or 50 g (1/4 cup) dry black beans
  • 1/2 medium ripe avocado
  • 2 medium ripe bananas
  • 60 g (2.1 oz) dark chocolate (I used 6 pieces of Lindt 85% Cocoa EXCELLENCE Bar)

INSTRUCTIONS
  • For dry beans only. Soak your beans for at least 8 hours. Rinse them, bring a pot of water to a boil (I like to add a piece of Kombu seaweed because helps soften the beans and makes them more digestible), add the beans, bring to a boil, and cook, covered, for about 2 hours. Rinse them and allow to cool down.
  • Preheat the oven to 180°C (350°F). Line a 25x15 centimeters (10x6 inches) baking dish with parchment paper.
  • Simmer a pot of water, remove from the heat and put the bowl of dark chocolate on top of the pot (double-boil method). Mix well until the chocolate is fully melted.
  • Place the beans, the avocado and the bananas in a food processor and process until smooth. The batter will be thick, and if you need to you can add in a tablespoon of water.
  • Add the batter into the bowl with the melted chocolate and mix well.
  • Pour the mixture into the prepared pan and use a spatula to spread evenly, and bake for 25-30 minutes or until a toothpick inserted into the middle comes out clean-ish. The top should be completely set and no longer jiggle. 
  • Allow them to cool down a bit in the pan, then allow them to cool down completely on a wire rack before cutting 12 bars. Store in the fridge in an airtight container up to 3 days. 


Ho un debole per i dolci ma sfortunatamente non sono esattamente salutari. La maggior parte delle volte sono bombe caloriche, piene di grassi non salutari e zuccheri. Specialmente zuccheri.

Oltre ai dolci, amo i brownies, quindi ho pensato di fare, o almeno di provare a fare, una versione più salutare della ricetta tradizionale. E dopo alcuni tentativi falliti, ho avuto un discreto successo con questa ricetta senza farina, senza zucchero, senza uova, e senza latticini.

INGREDIENTI
12 brownies
  • 105 g fagioli neri, sciacquati e scolati, o 50 g di fagioli neri secchi
  • 1/2 avocado medio maturo
  • 2 banane medie mature
  • 60 g di cioccolato fondente (Io ho utilizzato Lindt 85% EXCELLENCE)

PROCEDIMENTO
  • Solo per i fagioli secchi. Mettete a bagno i fagioli per almeno 8 ore. Scolateli, portate abbondante acqua a bollore (solitamente aggiungo un pezzettino di alga Kombu perché aiuta ad ammorbidire i fagioli e li rende più digeribili), aggiungete i fagioli, portate a bollore, e cuocete, con coperchio, per circa 2 ore. Scolateli e lasciateli raffreddare.
  • Preriscaldate il forno a 180°C. Foderate una teglia 25x15 con carta da forno.
  • Fate sciogliere il cioccolato fondente a bagnomaria. Mescolate bene finché il cioccolato è completamente sciolto.
  • Mettete i fagioli, l'avocado e le banane in un robot da cucina, e lavorate finché liscio ed omogeneo. L'impasto sarà abbastanza denso, e se dovete, potete aggiungere un cucchiaio di acqua.
  • Aggiungete l'impasto nella ciotola con il cioccolato sciolto e mescolate bene. 
  • Versate il composto nella teglia preparata in precedenza e utilizzate una spatola per distribuire il composto equamente, e cuocete per 25-30 minuti o finché uno stuzzicadenti inserito nel centro esce quasi pulito. La parte superiore dovrebbe essere completamente rassodata e non dovrebbe muoversi più.
  • Fate raffreddare un po' nella teglia, poi fate raffreddare completamente su una gratella prima di tagliare 12 barrette. Conservate in frigo in un contenitore ermetico per massimo 3 giorni.
