Baked Cod with Potatoes, Cherry Tomatoes and Olives // Merluzzo al forno con patate, pomodorini e olive

As I've mentioned a couple times in the past, cod is one of my favourite fishes. Not because it's a skinny fish, but because of its delicate flavour. Sure, it depends on the kind of cod you use. If you are using dried cod, that's not going going to be very delicate, netiher in flavour nor taste. Believe me, I grew up in a family eating it at least once a year.

I am rambling, am I not? Anyway, today I'm sharing with you another recipe that embraces all of its delicacy because fresh is the cod I used, and it's the best one if you need a tasty dish but don't have a lot of time.


After the cabbage and walnut salad, this time I paired this fish with a typical Italian combination, potatoes, tomatoes and olives. It really doesn't get any better than this. The earthy potatoes, the sweet and sour tomatoes and the salty olives indeed work fantastically with cod. And don't forget the parsley, it really adds to the final dish. 


INGREDIENTS
1 serving
  • 2 cod fillets - about 150 g (5.3 oz) both
  • 1 small potato - about 80 g (2.8 oz)
  • 4 cherry tomatoes
  • 25 g (1/4 cup) black olives
  • Fresh parsley
  • Extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
  • Preheat the oven to 180°C (350°F). Oil a baking dish.
  • Place the potato in a pot of salted water and bring to a oil. Cook for 10 minutes, drain it and let it cool down. Peel it, then slice it. Cut the tomatoes in half.
  • Place the potato slices on a single layer in the baking dish. Place the cod fillets on top and add the tomatoes and olives. Season with salt and pepper and drizzle with olive oil.
  • Bake for 15 minutes. Cover with foil and cook for about 10 more minutes, until potatoes are tender.
  • Serve with chopped fresh parsley.

Come vi ho già detto un paio di volte in passato, il merluzzo è uno dei miei pesci preferiti. Non perché è un pesce magro, ma per via del suo sapore delicato. Certo, dipende dal tipo di merluzzo che utilizzare. Se utilizzare lo stoccafisso, sicuramente non sarà molto delicato, né di adoro né di sapore. Credetemi, sono cresciuta in una famiglia che lo mangiava almeno una volta all'anno.

Sto divagando, vero? Comunque sia, oggi ho per voi un'altra ricetta che racchiude tutta la sua delicatezza in quanto ho utilizzato il merluzzo fresco, ed è il migliore se avete bisogno di un piatto gustoso e non avete molto tempo.

Dopo l'insalata di cavolo e noci, questa volta ho abbinato il pesce ad una combinazione tipicamente italiana, patate, pomodori e olive. Non c'è proprio niente di meglio! Le patate terrose, i pomodori dolci e aspri e le olive salate sono infatti ottimi con il merluzzo. E non dimenticatevi il prezzemolo, aggiunge molto al piatto finale.

INGREDIENTI
1 porzione
  • 2 filetti di merluzzo - circa 150 g entrambi
  • 1 patata piccola - circa 80 g
  • 4 pomodorini
  • 25 g olive nere
  • Prezzemolo fresco
  • Olio extravergine di oliva
  • Sale
  • Pepe

PROCEDIMENTO
  • Preriscaldate il forno a 180°C. Oleate una pirofila.
  • Mettete la patata in una pentola con acqua salata e portate a bollore. Cuocete per 10 minuti, scolatela e lasciatela raffreddare. Sbucciatela, quindi affettatela. Tagliate i pomodori a metà.
  • Mettete le fette di patata in un unico strato nella pirofila. Disponetevi sopra i filetti di merluzzo e aggiungete i pomodori e le olive. Salate e pepate e completate con un giro d'olio.
  • Cuocete per 15 minuti. Coprite con carta alluminio e cuocete per altri 10 minuti, finché le patate non saranno tenere.
  • Servite con prezzemolo fresco tritato.
