Beet and Beluga Lentil Soup // Zuppa di barbabietole e lenticchie Beluga

Happy New Year! I hope you have had a good start into the new year. Either way, I'm going it make it a little better with another soup of mine, this red and delicious beet and Beluga lentil soup.

It is warm and comforting as any soup should be, but most important it's good for you and it's ingredients fits the beginning of the new year. I know, lentils are supposed to be eaten on December 31, but I love them all year round, and after all the debauchery of the holidays, it's important to clean the body, and what a better way to do that than eating low-fat protein? That's what the black lentils are for. And I'm pretty sure you know what's the role of beets in this soup, they detox the body.



Also beets and lentils compliment each other so well! Beets infuse their earthy flavour and sweetness to the lentils, and also give them their nice colour.

To get different textures, I added some of the beets at the beginning and some at the end, and they were delicious.


If you want a very filling dish, you can serve this soup with bread. I used toasted whole wheat Altamura bread, I'm currently obsessed with it.

INGREDIENTS
1 serving
  • 60 g (1/3 cup) Beluga lentils
  • 1 medium beet, cooked and chopped
  • 1/2 onion, chopped
  • 1 carrot, chopped
  • 1 sprig thyme
  • 1 bay leaf
  • 300 ml (1 1/4 cup) vegetable broth
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon extra virgin olive oil
  • Salt

INSTRUCTIONS
  • Heat the oil in a pot over medium heat. Add the onion and carrot and sautée for 2 minutes. Add the lentils, half of the beets, thyme and bay leaf, pour the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 20-25 minutes.
  • Add the remaining beets, season with salt, stir in the balsamic vinegar and serve.


Buon anno! Spero abbiate iniziato bene il nuovo anno. In qualunque caso, lo renderò un po' migliore con un'altra delle mie zuppe, questa zuppa rossa e deliziosa di barbabietole e lenticchie Beluga.

È calda e confortevole come dovrebbe essere ogni zuppa, ma soprattutto fa bene e gli ingredienti sono adatti per l'inizio dell'anno. Lo so, le lenticchie dovrebbero essere mangiate il 31 dicembre, ma io le adoro tutto l'anno, e dopo tutti gli stravizi delle feste, è importante ripulire il corpo, e quale modo migliore di proteine povere di grassi? Ecco a cosa servono le lenticchie nere. E sono abbastanza sicura che sapete qual è il ruolo delle barbabietole in questa zuppa, disintossicano il corpo.

Inoltre le barbabietole e le lenticchie si completano a vicenda così bene! Le barbabietole infondono il loro sapore terroso e la loro dolcezza alle lenticchie, e le conferiscono anche il loro bel colore.

Per avere consistenze diverse, ho aggiunto una parte delle lenticchie all'inizio e un'altra alla fine, ed erano ottime.

Se volete un piatto super saziante, servite questa zuppa con del pane. Io ho utilizzato pane di Altamura integrale tostato, al momento ne sono ossessionata.

INGREDIENTI
1 porzione
  • 60 g lenticchie Beluga
  • 1 barbabietola media, cotta e tagliata a pezzi
  • 1/2 cipolla, tritata
  • 1 carota, tritata
  • 1 rametto di timo
  • 1 foglia di alloro
  • 300 ml brodo vegetale
  • 1 cucchiaino aceto balsamico
  • 1 cucchiaino olio extravergine di oliva
  • Sale

PROCEDIMENTO
  • Scaldate l'olio in una pentola su fiamma media. Aggiungete la cipolla e carota e cuocete per 2 minuti, mescolando. Aggiungete le lenticchie, metà delle barbabietole, timo e foglia di alloro, versate il brodo vegetale e portate a bollore. Riducete la fiamma al minimo, coprite, e cuocete per 20-25 minuti.
  • Aggiungete le restanti barbabietole, salate, aggiungete l'aceto balsamico, mescolate e servite.

  5. Anch'io vivrei tutto l'anno di queste zuppette..e poco ci manca :-P Mi intriga l'abbinamento di questi due ingredienti..credo proprio che valga la pena cedere in tentazione ^_*
