Savoy Cabbage with Chickpeas // Cavolo verza con ceci

I saw an interesting warm salad recipe on a magazine - I believe it was Confidenze - a while back, I cut it out and saved if for the day I would make it. That day has come. Well, kinda since that was a salad with chickpeas, spinach, anchovies and bread, while the dish I'm sharing with you today it's made with savoy cabbage and chickpeas.

I know what you are thinking. Sonia, why on earth did you use savoy cabbage when you could have used spinach, a vegetable everybody likes? It's simple. First, because right now in my vegetable garden there's savoy cabbage everywhere, so I'd rather use something I already have than spending money.


And second, because I think savoy cabbage is too underrated. I know many don't like the taste or the smell - especially the smell - but it is a mine of nutrients. It is rich in iron, calcium, fibers, vitamin C, vitamin K - which is very important for the brain -, it is anti-inflammatory, helps detoxify the body and has antitumor properties.


That's why in my opinion it is the perfect pairing for chickpeas, another great source of iron and calcium that reduces cholesterol and boosts the immune system. Basically two essential ingredients to stay healthy, but most important to keep influenza away.

INGREDIENTS
1 serving
  • 50 g (1/3 cup) dried chickpeas or 100 g (3/4 cup) cooked chickpeas
  • 1/4 medium savoy cabbage,
  • 1 garlic clove
  • 1 sprig rosemary
  • 1/2 tablespoon extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
For the dried chickpeas
  • Place the chickpeas in a bowl, cover with cold water and let them soak for 12 hours.
  • Drain the chickpeas, rinse and place them in a pot. Cover with cold water, bring to a boil, cover and simmer for about 2 hours, until the chickpeas are tender. Drain them.

  • Wash the cabbage, then thinly slice it. Add it in a pot with 60 ml (1/4 cup) of water, season with salt, cover, and cook on low heat for 10 minutes.
  • Heat the olive oil in a pan over on medium heat, add the garlic, crushed but with its skin on, and cook for 1-2 minutes. Add cabbage, chickpeas, rosemary and sautée for 5 minutes.
  • Season with salt and pepper and serve.


Ho visto un'insalata tiepida interessante su una rivista - credo fosse Confidenze - un po' di tempo fa, e l'ho ritagliata e messa da parte per il giorno in cui l'avrei fatta. Quel giorno è arrivato. Beh, quasi dato che quella era un'insalata con ceci, spinaci, acciughe e pane, mentre il piatto che sto condividendo con voi oggi è fatto con cavolo verza e ceci.

Lo so cosa state pensando. Sonia, perché mai hai utilizzato la verza quando potevi benissimo utilizzare gli spinaci, una verdura che piace a tutti? È semplice. Primo perché al momento nel mio orto ci sono verze ovunque, dunque preferisco utilizzare qualcosa che ho già invece di sprecare soldi.

E secondo perché ritengo che il cavolo verza sia troppo sottovalutato. Lo so che a molti non piace il sapore o l'odore - soprattutto l'odore - ma è una miniera di nutrienti. È ricco di ferro, calcio, fibre, vitamina C, vitamina K - che è molto importante per il cervello -, è anti-infiammatorio, aiuta a depurare il corpo e ha proprietà antitumorali.

Ecco perché secondo me fa l'accoppiata perfetta con i ceci,un'altra grande fonte di ferro e calcio che riduce il colesterolo e rinforza il sistema immunitario. In poche parole due ingredienti essenziali per restare in salute, ma soprattutto per tenere lontana l'influenza.

INGREDIENTI
1 porzione
  • 50 g ceci secchi o 100 g ceci già cotti
  • 1/4 cavolo verza medio
  • 1 spicchio d'aglio
  • 1 rametto rosmarino
  • 1/2 cucchiaio olio extravergine di oliva
  • Sale
  • Pepe

PROCEDIMENTO
Per i ceci secchi
  • Mettete i ceci in una ciotola, copriteli con acqua fredda e lasciateli in ammollo per 12 ore.
  • Scolate e sciacquate i ceci e metteteli in una pentola. Copriteli con acqua fredda, portate a bollore, coprite, e cuocete a fiamma bassa per circa 2 ore, finché i ceci saranno teneri.

  • Lavate il cavolo, quindi tagliatelo a strisce sottili. Mettetelo in una pentola con 60 ml di acqua, salate, coprite e cuocete su fiamma bassa per 10 minuti.
  • Scaldate l'olio di oliva su una padella su fiamma media, aggiungete l'aglio, schiacciato ma non sbucciato, e cuocete per 1-2 minuti. Aggiungete cavolo, ceci, rosmarino e cuocete, mescolando, per 5 minuti.
  • Salate, pepate e servite.
