Red Lentil Soup with Turnips // Zuppa di lenticchie rosse con rape

Soups are just the best way to keep you warm or warm you up, and they also are the easiest way to eat healthy. If you don't add any heavy cream or a lot of fats, of course.

Today I decided to share with you my absolute favourite, this red lentil soup with turnips. Why is it my favourite? Because it is tasty, packed with flavour and it's made with my favourite legume, red lentils, and turnips, which in my opinion is one of the most underrated vegetables.


This soup is packed with nutrients and health benefits, which makes it perfect for the holiday season, mainly because of lentils' ability to reduce cholesterol thanks to their high levels of soluble fiber. And because of their protein content, you can have them instead of meat, and give your body a break.


But that's not all. Just like I said before, it's also delicious, and the turnip is the best part. They become soft and change in flavour - I'm sure even those who don't like them, will enjoy this soup - and the fresh parsley brings so much freshness.


INGREDIENTS
1 serving
  • 60 g (1/3 cup) red lentils
  • 480 ml (2 cups) vegetable broth
  • 1 turnip
  • 1/2 onion
  • 1 tomato
  • 1 garlic clove
  • Fresh parsley
  • 1/2 tablespoon extra virgin olive oil
  • Apple cider vinegar
  • Salt
  • Pepper

INSTRUCTIONS
  • Dice the onion and chop the garlic clove. Peel and dice the turnip. Chop the tomato.
  • Heat the oil in a pot over medium heat, add the onion and garlic and cook for 1 minute. Add the turnip, tomatoes and lentils and give it a stir.
  • Pour the broth, and bring to a boil. Cover, reduce the heat to low and simmer for 30-35 minutes, until the lentils are tender and start to break down a little, adding salt towards the end. 
  • Add more salt if needed, season with pepper, stir in a splash of apple cider vinegar and some chopped parsley, and serve.

NOTES
  • You can also use red split lentils. In that case you will only need 360 ml (1 1/2 cup) of broth, and the cooking time will be 20-25 minutes.


Le zuppe sono il migliore dei modi per restare caldi o per riscaldarsi, e sono anche il modo più semplice per mangiare sano. Se non aggiungete panna o tanti grassi, ovviamente.

Oggi ho deciso di condividere con voi la mia preferita in assoluto, questa zuppa di lenticchie rosse con rape. Perché è la mia preferita? Perché è gustosa, ricca di sapore ed è fatta con i miei legumi preferiti, le lenticchie rosse, e le rape, che secondo me sono le verdure più sottovalutate.

Questa zuppa è ricca di nutrienti e benefici per la salute, il che la rende perfetta per il periodo delle feste, soprattutto grazie alla capacità delle lenticchie di abbassare il colesterole per via del loro alto contenuto di fibre solubili. E per via del loro contenuto di proteine, potete gustarle al posto della carne, e dare al vostro corpo una sosta.

Ma non è tutto. Come ho già detto prima, è anche deliziosa, e le rape sono la parte migliore. Diventano morbide e cambiano di sapore - sono sicura che anche a coloro che non piacciono piacerà questa zuppa - e il prezzemolo fresco dona una tale freschezza.

INGREDIENTI
1 porzione
  • 60 g lenticchie rosse
  • 480 ml di brodo vegetale
  • 1 rapa
  • 1/2 cipolla
  • 1 pomodoro
  • 1 spicchio d'aglio
  • Prezzemolo fresco
  • 1/2 cucchiaio olio extravergine di oliva
  • Aceto di mele
  • Sale
  • Pepe

PREPARAZIONE
  • Tagliate la cipolla a cubetti e tritate l'aglio. Pelate e tagliate la rapa a cubetti. Fate a pezzi il pomodoro.
  • Scaldate l'olio in una pentola su fiamma media, aggiungete la cipolla e aglio e cuocete per 1 minuti. Aggiungete la rapa, pomodoro e lenticchie, e mescolate.
  • Versate il brodo, e portate a bollore. Coprite, riducete la fiamma al minimo e cuocete per 30-35 minuti, finché le lenticchie non sono tenere e iniziando a disfarsi un po', salando verso fine cottura.
  • Aggiustate di sale, pepate, mescolatevi un goccio di aceto di mele e del prezzemolo tritato e servite.

NOTE
  • Potete anche utilizzare le lenticchie decorticate. In quel caso avrete bisogno di soltanto 360 ml di brodo, e i tempi di cottura saranno 20-25 minuti.
