Baked Sea Bream // Orata al cartoccio

On an August evening last summer I had dinner at a seafront restaurant. A rather disappointing dinner, in part because after reading the menu I wanted to order the tuna with pistachios but at first the waitress told me they had no tuna, then, after asking, she told me they were out of pistachios, and thus I was forced to order something else, in part because some of the courses and especially the service left much to be desired.

Eventually I went with grilled sea bream fillets. I had never eaten sea bream before but I knew it was a very delicate fish. It was so delicious I immediately fell for its meat, and I promised myself to cook it.


And here I am, perhaps too many months later, cooking this precious fish. However, not wanting to ruin the only good memory about that restaurant, I decided to bake it instead of grilling it. This not only preserves the nutrients, but this way the dish is more light and easy to make.

So easy to make it's a child's play. Sure, cleaning isn't great, but if you don't know how to do it or you don't want to do it, I'm sure the fishmonger will make you the favour.


That being said, the baked sea bream should be brought to the tale whole, and filleted only when eaten so that it releases all of its aromas.

INGREDIENTS
  • 1 serving
  • 1 small sea bream
  • 2 lemon slices
  • 1 thyme sprig
  • 1 rosemary sprig
  • 1 garlic clove
  • Extra virgin olive oil
  • Himalayan salt
  • Pepper

INSTRUCTIONS
  • Preheat the oven to 180°C (350°F).
  • Remove the fish's scales with the back of a king, starting from the tail toward the head. With scissors, cut the belly up to the head, then remove the entrails and wash the fish under cold running water. Pat it dry.
  • Season with salt and pepper the inside of the fish, then stuff it with the lemon slices, thyme and crushed garlic clove.
  • Place the fish on a baking tray lined with parchment paper, then massage the fish with some oil, season with salt and pepper, and lean over the rosemary.
  • Close the foil, sealing well the edges, then cook in the oven for about 25 minutes.


In una sera d'agosto della scorsa estate sono stata a cena in un ristorante sul lungomare. Una cena alquanto deludente, in parte perché leggendo il menù avevo intenzione di ordinare tonno ai pistacchi, ma in un primo momento la cameriera mi dice che non avevano tonno, poi, dopo aver chiesto, erano i pistacchi a mancare, e sono dunque stata obbligata a fare un'altra scelta, in parte perché alcune portate e soprattutto il servizio hanno lasciato molto a desiderare.

Alla fine optai per i filetti di orata alla griglia. Non avevo mai mangiato l'orata prima di quel momento però sapevo che era un pesce molto delicato. Era così buona che mi innamorai subito della sua carne, e mi ripromisi di cucinarla.

Ed eccomi qua, forse troppi mesi dopo, a preparare questo pesce pregiato. Però, non volendo rovinare l'unico ricordo piacevole di quel ristorante, ho deciso di farla al cartoccio anziché alla griglia. In questo modo non solo si preservano le sostanze nutritive, ma il piatto rimane anche più leggero e semplice.

Così semplice che è un vero gioco da ragazzi. Certo, pulirla non è il massimo, ma se non sapete farlo o non avete voglia, sono sicura che il pescivendolo vi farà questo piacere.

Detto questo, l'orata al cartoccio va rigorosamente portata in tavola intera e sfilettata al momento così che sprigioni tutti i suoi aromi.

INGREDIENTI
1 porzione
  • 1 orata piccola
  • 2 fette di limone
  • 1 rametto di timo
  • 1 rametto di rosmarino
  • 1 spicchio d'aglio
  • Olio extravergine di oliva
  • Sale dell'Himalaya
  • Pepe

PROCEDIMENTO
  • Preriscaldate il forno a 180°C.
  • Squamate l'orata con il dorso di un coltello partendo dalla coda verso la testa. Con le forbici praticate un taglio sul ventre e procedete fin sotto la testa, quindi eliminate le interiora e lavatela sotto acqua fredda corrente. Asciugatela.
  • Salate e pepate l'interno del pesce, inserite nell'apertura le fette di limone, il timo e lo spicchio d'aglio.
  • Mettete il pesce su una teglia foderata con carta da forno, quindi massaggiatelo con un po' di olio, salatelo e pepatelo, e appoggiatevi sopra il rosmarino. 
  • Chiudete il cartoccio, sigillando bene i bordi, quindi cuocete nel forno per 25 minuti circa.
