Roasted Okra // Okra arrostite

 At the beginning of this week I told you I would talk a little more about okra and here I am, keeping my promise, with these delicious roasted okra, my favourite way to enjoy them cooked.

Since some of you are familiar with them while others have no idea what I'm talking about, okra is native to tropical Africa and Asia, it has a flavour that somewhat resembles that of an eggplant with hints of artichoke and asparagus. In other words, it's delicious!


They can be eaten raw, roasted, grilled, fried and sautéed. Basically however you want. And you also pickle them. And thanks to their gelatin they are great to thicken soups as well.

And I still haven't told you the best part, they are rich in vitamins, minerals, folic acid and fiber. And they also help to balance blood sugar levels and keep cholesterol under control.


As I mentioned above, roasting is my favourite way to cook them and cumin is my to-go spice because it provides a smoky flavour that goes with them beautifully.

INGREDIENTS
2 servings
  • 230 g (1/2 pound) okra, about 180 g (2 cups) trimmed and sliced
  • 1/2 tablespoon extra virgin olive oil
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon salt

INSTRUCTIONS
  • Preheat the oven to 200°C (400°F).
  • Wash the okra, cut off the stem then cut into 1,5 cm (almost 1/2 inch) slices.
  • Move them to a rimmed baking sheet, drizzle with olive oil, season with cumin and salt and stir.
  • Roast in the oven for about 20 minutes. Serve immediately.

All'inizio di questa settimata vi ho detto che vi avrei parlato un po' di più delle okra ed ecco qui, a mantenere la mia promessa, con queste deliziose okra arrostite, il modo che preferisco per gustarle cotte.

Dato che alcuni di voi le conoscono mentre altri non hanno la più pallida idea di cosa stia parlando, l'okra è una pianta nativa dell'Africa tropicale e dell'Asia, ha un sapore che ricorda quello di una melanzana con sentori di carciofo e asparago. In altre parole, è deliziosa!

Possono essere mangiate crude, arrostite, grigliate, fritte o saltate in padella. In pratica come volete. E potete anche metterle sott'aceto. E grazie alla loro gelatina sono ottime anche per addensare zuppe.

E ancora non vi ho detto la parte migliore, sono ricche di vitamine, minerali, acido folico e fibre. E aiutano anche a bilanciare i livelli di zucchero nel sangue e tengono sotto controllo il colesterolo.

Come ho già detto prima, arrostite è il modo che preferisco per cucinarle e il cumino è la spezia per cui opto perché le conferisce un sapore affumicato con cui sta benissimo.

INGREDIENTI
2 porzioni
  • 230 g di okra, circa 180 g mondate e affettate
  • 1/2 cucchiaio di olio extravergine di oliva
  • 1/4 cucchiaino di cumino in polvere
  • 1/4 cucchiaino di sale

PROCEDIMENTO
  • Preriscaldate il forno a 200°C.
  • Lavate le okra, tagliate il gambo e quindi riducetele a fette di 1,5 cm.
  • Trasferitele in una teglia, irrorate con l'olio di oliva, insaporite con cumino e sale e mescolate.
  • Arrostite in forno per circa 20 minuti. Servite subito.
