Beef Tenderloin Steak with Mint Chimichurri and Braised Purple Cabbage // Filetto di manzo con chimichurri di menta e cavolo viola brasato

I've learned a lot by watching MasterChef US, and one of those things is that steak and chimichurri is a popular pairing, and I decided to try it. Only after doing some researches about chimichurri though because I wasn't very familiar with it. To be honest, before MasterChef, I didn't even know it existed.

Now that we have acknowledged how ignorant I am - and by the way, it is an Argentinian sauce used for grilled meat and made of parsley, garlic, oil, red chilli pepper and vinegar -, let's talk about my version of chimichurri where I used mint instead of parsley as it goes beautifully with beef. If you have never tried this combination, I urge you give it a try.


And you know what works with beef and mint as well? Purple cabbage cooked with red onion, a delicious, light and sweet side to the steak.

INGREDIENTS
1 serving
  • 1 beef tenderloin steak (about 130 g//4.5 oz)
  • 100 g (1 cup) shredded purple/red cabbage
  • 1/2 red onion, thinly sliced
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon apple cider vinegar
  • Salt
  • Black pepper

For the chimichurri
  • 5 g (1/4 cup, packed) fresh mint leaves
  • 1/2 garlic clove
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon lime juice
  • 1/4 teaspoon salt
  • 1/2 dried chilli (optional)

INSTRUCTIONS
  • Heat the oil in a pan on medium heat. Add the onion, season with salt and pepper, and cook, stirring occasionally, for 2-3 minutes, or until softened. 
  • Add the cabbage, season with salt and pepper, and cook, stirring frequently, for 2-3 minutes. Reduce the heat to low, add vinegar and 2 tablespoons of water, stir, cover and cook for 10 minutes, until cabbage is very tender. Add more water if needed. 
  • Move to a plate and keep warm. Rinse and wipe clean the pan.
  • Pat dry the steak; season with pepper on both sides. 
  • Heat the cleaned pan on medium-high. Add the steak and cook for 1-2 minutes on each side. Move to a cutting board and let it rest for at least 5 minutes.
  • While the steak is resting, finely chop mint and garlic. Mince the chilli. Move to a small bowl, add olive oil, lime juice, and salt, and stir well.
  • Serve the steak with the braised cabbage and mint chimichurri.

NOTES
  • If you want the cabbage to turn red, add the vinegar only after it's cooked. 

Ho imparato molto guardando MasterChef US e una di quelle cose è che bistecca e chimichurri è un abbinamento popolare, così ho deciso di provarlo. Però solo dopo aver fatto delle ricerche sul chimichurri perché non lo conoscevo molto. A dirla tutta, prima di MasterChef, non sapevo neanche che esisteva.

Ora che abbiamo appurato la mia ignoranza - e comuque è una salsa argentina utilizzata per la carne alla griglia e fatta con prezzemolo, aglio, olio, peperoncino e aceto -, parliano della mia versione del chimichurri dove ho utilizzato la menta al posto del prezzemolo in quanto si abbina molto bene con il manzo. Se non avete mai provato questa combinazione, vi esorto a provarla.

E sapete cos'altro sta bene con manzo e menta? Cavolo viola cotto con cipolla rossa, un contorno delizioso, leggero e dolce.


INGREDIENTI
1 porzione
  • 1 filetto di manzo (circa 130 g)
  • 100 g di cavolo viola, tagliato a striscioline
  • 1/2 cipolla rossa, affettata finemente
  • 1 cucchiaino di olio extravergine di oliva
  • 1 cucchiaino di aceto di mele
  • Sale
  • Pepe nero

Per il chimichurri
  • 5 g di foglie di menta fresca
  • 1/2 spicchio d'aglio
  • 1 cucchiaio di olio extravergine di oliva
  • 1 cucchiaino di succo di lime
  • 1/4 cucchiaino di sale
  • 1/2 peperoncino secco (facoltativo)

PROCEDIMENTO
  • Scaldate l'olio in una padella su fiamma media. Aggiungete la cipolla, salate e pepate, e cuocete, mescolando di tanto in tanto, per 2-3 minuti, o finché si sarà ammorbidita.
  • Aggiungete il cavolo, salate e pepate, e cuocete, mescolando spesso, per 2-3 minuti. Riducete la fiamma al minimo, aggiungete l'aceto e 2 cucchiai di acqua, mescolate, coprite e cuocete per 10 minuti, finché il cavolo è molto tenero. Aggiungete altra acqua se necessario.
  • Trasferite su un piatto e tenete a caldo. Sciacquate e pulite bene la padella.
  • Asciugate il filetto; pepatelo su entrambi i lati.
  • Scaldate la padella pulita su fiamma medio-alta. Aggiungete il filetto e cuocete per 1-2 minuti per lato. Trasferite su un tagliere e lasciate riposare per almeno 5 minuti.
  • Mentre il filetto riposa, tritate finemnete menta, aglio e peperoncino. Trasferiteli in una piccola ciotola, aggiungete olio di oliva, succo di lime e sale, e mescoalte bene. 
  • Servite il filetto con il cavolo brasato e la chimichurri di menta.

NOTE
  • Se volete che il cavolo diventi rosso, aggiungete l'aceto solo quando è cotto.
