Soybean and Lacinato Kale Soup // Zuppa di soia e cavolo nero

Snow finally came. I've been waiting for this moment since I started the blog last April because I wanted to try replicate Minnie's stew from Tarantino's "The Hateful Eight". I thought it'd be great to take photos with snow in background.

Unfortunately snow came without much of a warning and guess what I do have at home? Beef to make Minnie's stew. I still wanted to eat a hearty soup, so I decided to replace meat with beans and my choice fell on soybeans.


Why soy? Because they've been waiting in my pantry to be used for ages. Almost literally. So it was about time I used them. Also I noticed there aren't a lot of soups - or recipes in general - with soybeans on the internet. I guess people just don't like them. Or maybe it's because most of it is GMO. So when you buy it, make sure it isn't.


Anyway, this soup is so rich in flavour because of all the veggies - especially my beloved lacinato kale - you'll barely taste the soy. 

And I don't know why, but the smell and taste of this soup reminded me the one I used to eat at the school canteen when I was a kid. I doubt they were using soy and kale though. 

INGREDIENTS
1 serving
  • 50 g (1/3 cup) dried soybeans
  • 6 leaves lacinato kale, cut widthwise
  • 1 potato, diced
  • 1 carrot, halved and sliced 
  • 1 bay leaf
  • 1 teaspoon baking soda
  • Extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
  • Place the soybeans in a bowl, cover with cold water, stir in the baking soda and soak for 12 hours. Drain and rinse them.
  • Move the beans to a pot, cover with water, add the bay leaf and bring to a boil. Reduce the heat, cover and simmer for 40 minutes. Remove the bay leaf.
  • Add the kale, potato and carrot, and cook for 20-25 minutes, until the soybeans are tender. Add more water if needed.
  • Season with salt and pepper and pour the soup in a bowl. Drizzle with olive oil and serve.


La neve finalmente è arrivata. Ho aspettato questo momento da quando ho aperto il blog ad aprile perché volevo ricreare lo stufato di Minnie da "The Hateful Eight" di Tarantino. Ho pensato che sarebbe stato fantastico fare le foto con la neve sullo sfondo.

Purtroppo la neve è arrivata senza molto preavviso e indovinate cosa non avevo in casa? Il manzo per fare lo stufato di Minnie. Volevo comunque fare una zuppa saziante, così ho deciso di sostituire la carne con i fagioli e la mia scelta è ricaduta sulla soia.

Perché la soia? Perché è da anni che sono nella mia credenza. Quasi letteralmente. Dunque era ora che li utilizzassi. Inoltre mi sono accorta che non ci sono molto zuppe - o ricette in generale - con i fagioli di soia su internet. Immagino alle persone non piacciano. Oppure è perché la maggior parte è OGM. Quindi quando li comprate assicuratevi che non lo siano.

A parte questo, questa zuppa è così ricca di sapore per via di tutte le verdure - soprattutto il mio amato cavolo nero - che sentirete a malapena la soia.

E non so perché, ma l'odoro e il sapore di questa zuppa mi ha ricordato quella che mangiavo alla mensa scolastica quando ero bambina. Però dubito che utilizzassero soia e cavolo nero.

INGREDIENTI
1 porzione
  • 50 g fagioli di soia secchi
  • 6 foglie cavolo nero, tagliate per il senso della larghezza
  • 1 patata, a cubetti
  • 1 carota, tagliata a metà e affettata
  • 1 foglia alloro
  • 1 cucchiaino bicarbonato di sodio
  • Olio extravergine di oliva
  • Sale
  • Pepe

PROCEDIMENTO
  • Mettete i fagioli di soia in una ciotola, copriteli con acqua fredda, mescolatevi il bicarbonato e tenete a bagno per 12 ore. Scolate e sciacquate.
  • Mettete i fagioli in una pentola, coprite con acqua, aggiungete la foglia di alloro e portate a bollore. Riducete la fiamma, coprite, e cuocete per 40 minuti. Togliete la foglia di alloro.
  • Aggiungete il cavolo, patata, carota, e cuocete per 20-25 minuti, finché la soia non sarà tenera. Aggiungete altra acqua se necessaria.
  • Salate, pepate e versate la zuppa in una ciotola. Completate con un giro d'olio e servite.
