Red Rice with Broccoli, Enoki Mushrooms and Fried Egg // Riso rosso con broccoli, funghi enoki e uovo fritto

I have recently made another exciting discovery on the Asian front: the enoki mushrooms. Why haven't I tried them before? Because I've never seen them at the grocery store, until now. And these little guys are amazing.

They have a very delicate and slightly sweet flavour and their texture is so creamy. And they tend to have a noodle-like texture when cooked which, for me, is awesome. And just like any other (edible) mushroom, they are very healthy.


But let's move onto the recipe, shall we? As you know because I've already mentioned it something like a million times, I love Asian food, so what a better way to use Asian mushrooms than pairing with Asian ingredients? Okay, maybe the ingredients aren't Asian, but they are widely used in Asian cuisine.

Those ingredients are broccoli, fried egg, seaweeds and aromatic red Jasmine rice. What could you ask more from life?


INGREDIENTS
1 serving
  • 60 g (1/3 cup) red Jasmine rice
  • 150 g (1 1/2 cup) broccoli florets
  • 2 handful enoki mushrooms
  • 2 teaspoons soy sauce
  • 2 teaspoons lime juice
  • 1 teaspoon Dulse seaweed
  • 1 garlic clove, minced
  • 1 egg
  • Virgin coconut oil
  • Salt

INSTRUCTIONS
  • Bring to a boil a pot of salted water, add the rice and cook for 35-40 minutes (always check the instructions on you package). Drain it.
  • Whisk together the soy sauce and lime juice. Heat some coconut oil over medium heat, add the garlic and cook for 1 minute. Add the broccoli and cook for 4-5 minutes. Add the enoki, the soy and lime mixture and seaweeds, and stir well to combine. Move to a plate and keep warm.
  • Cook the egg in the same pan of the broccoli and mushrooms. Season with salt. 
  • Move the rice to a plate. Add the broccoli and mushrooms mixture, top with the egg and serve.


Di recente ho fatto un'altra scoperta sul fronte asiatico: i funghi enoki. Perché non li ho provati prima? Perché non li ho mai visti al supermercato, fino ad ora. E questi piccolini sono fantastici.

Hanno un sapore molto delicato e leggermente dolce e la loro texture è così cremosa. E tendono ad avere una texture simile a quella dei noodle quando cotti il che, per me, è fantastico. E come tutti gli altri funghi (commestibili), sono molto salutari.

Ma andiamo avanti con la ricetta, che ne dite? Come sapete perché l'ho già detto qualcosa come un milione di volte, amo il cibo asiatico, dunque quale modo migliore di utilizzare funghi asiatici di abbinarli con ingredienti asiatici? Beh, forse gli ingredienti non sono asiatici, ma sono ampiamente utilizzati nella cucina asiatica.

Questi ingredienti sono i broccoli, uovo fritto, alghe e aromatico riso rosso Jasmine. Cosa si potrebbe volere di più dalla vita?

INGREDIENTI
1 porzione
  • 60 g riso rosso Jasmine
  • 150 g cimette di broccoli
  • 2 manciate funghi enoki
  • 2 cucchiaini salsa di soia
  • 2 cucchiaini succo di lime
  • 1 cucchiaino alghe Dulse
  • 1 spicchio d'aglio, tritato
  • 1 uovo
  • Olio di cocco vergine
  • Sale

PROCEDIMENTO
  • Portate a bollore una pentola di acqua salata, aggiungete il riso e cuocete per 35-40 minuti (controllate sempre le istruzioni sulla confezione). Scolatelo.
  • Mescolate insieme la salsa di soia e succo di lime. Scaldare un po' di olio di cocco su fiamma media, aggiungete l'aglio e cuocete per 1 minuto. Aggiungete i broccoli e cuocete per 4-5 minuti. Aggiungete gli enoki, il mix di soia e lime, e le alghe, e mescolate bene per combinare. Mettete il tutto in un piatto e tenete in caldo,
  • Cuocete l'uovo nella stessa padella dei broccoli e funghi. Salate.
  • Trasferite il riso in un piatto. Aggiungete il composto di broccoli e funghi, completate con l'uovo e servite.
