Avocado Toast and Poached Egg // Avocado toast e uovo in camicia

Didn't I tell you I was trying to eat avocado every day? Well, sometimes I add it to my salads, sometimes I blend it to make a dressing or a pasta sauce, and sometimes, actually most of the times, I make avocado toasts.

I usually make it with buckwheat cakes, the buckwheat version of rice cakes, or crispbread because I don't have to toast the bread that way, and since I usually have them as a snack when I'm really hungry, it's the best way to go.


Then sometimes I feel like having an avocado toast for breakfast, or lunch, and that's when I make them fancier by using rye bread - I love how it tastes and the slices are so big I can fit half avocado in a slice only - and siding it with an egg. I usually go with sunny side up, but this time I had the time so I went with poached egg, probably my favourite way to have eggs.


Although I tried Gordon Ramsay's scrambled eggs - with some variations so let me know if you want the recipe - and they were pretty amazing, so I'm not sure anymore.

INGREDIENTS
1 serving
  • 1 slice rye bread
  • 1/2 avocado
  • 1 egg
  • White vinegar
  • Lime juice
  • Himalayan salt
  • Black Pepper

INSTRUCTIONS
  • Bring to a simmer a small pot of water with some vinegar. Crack the egg in a small bowl, then create a vortex in the water with a spoon and pour the egg. Cook for 2-3 minutes, until white is set. Remove with a slotted spoon and set to dry on kitchen paper.
  • Toast the bread to your liking. Slice the avocado.
  • Move the avocado on the toasted bread slice, season with lime juice, salt and pepper and serve with the poached egg.

Non vi avevo forse detto che stavo cercando di mangiare l'avocado tutti i giorni? Beh, a volte lo aggiungo alle mie insalate, a volte lo frullo per fare una salsa o un condimento per la pasta, e a volte, a dire il vero la maggior parte del tempo, faccio gli avocado toast.

Di solito li faccio con le gallette di grano saraceno, la versione di grano saraceno delle gallette di riso, o con i crispbread perché così non devo tostare il pane, e dato che solitamente li mangio come snack quando sono affamata, è la scelta migliore.

Poi alcune volte ho voglia di avocado toast per colazione, o pranzo, ed ecco quando li faccio più raffinati utilizzando il pane di segale - adoro il sapore e le fette sono così grandi che me ne basta una per mezzo avocado - e abbinandolo con un uovo. Di solito lo faccio ad occhio di bue, ma questa volta avevo tempo così ho fatto l'uovo in camicia, probabilmente la mia cottura preferita per le uova.

Anche se devo dire che ho provate le uova strapazzate di Gordon Ramsay - con delle variazioni qundi fatemi sapere se vi interessa la ricetta - ed erano a dir poco fantastiche, quindi non sono più così sicura.

INGREDIENTI
1 porzione
  • 1 fetta di pane di segale
  • 1/2 avocado
  • 1 uovo
  • Aceto bianco
  • Succo di lime
  • Sale dell'Himalaya
  • Pepe nero

PROCEDIMENTO
  • Portate ad un leggero bollore un pentolino di acqua con un po' di aceto. Rompete l'uovo in una ciotolina, quindi create un vortice nell'acqua con un cucchiaio e versate l'uovo. Cuocete per 2-3 minuti, finché il bianco si sarà rappreso. Scolate con un mestolo forato e fate asciugare su carta assorbente da cucina.
  • Tostate il pane a vostro piacimento. Affettate l'avocado.
  • Trasferite l'avocado sulla fetta di pane tostato, conditelo con succo di lime, sale e pepe e servitelo con l'uovo in camicia.
