Zucchini Noodles and Shrimps // Noodles di zucchine e gamberi

Shrimp and zucchini is a classic pairing when it comes to pasta. And it's one I love because it beautifully combines the products of the land and those of the sea. This dish, however, has one problem, there's pasta and, like I said last week, I can't handle it right now because of the heat, and cold pasta, unless you're making a pasta salad, doesn't really taste good.


But is that really a problem when one of the key ingredients is zucchini and there's such a thing as zucchini noodles? I don't think so. In fact, they make for a great alternative to pasta. Not only they make the dish lighter - which is great both with this weather and if you are watching your figure - but they make it more appropriate for the Summer time because of all the vitamins and minerals they have. And by using zucchini instead of the noodles you're definitely going to eat more of this seasonal vegetable.

But now let's talk about the dish, shall we? Just like your traditional pasta with shrimps and zucchini, this dish is flavourful, but it's also very quick to make. The best part? It's great once it has cooled down as well!

INGREDIENTS
1 serving
  • 2 small zucchini
  • 6 shrimps, shelled and deveined
  • 1/2 tablespoon coconut oil
  • 1/2 lime, juice
  • 1 garlic clove, minced
  • Fresh parsley
  • Salt
  • Pepper

INSTRUCTIONS
  • Make the noodles with the spiralizer. Alternatively, you can use a mandoline.
  • Heat the coconut oil in a pan over low heat. Add the garlic and cook for 1 minutes, stirring occasionally.
  • Add the shrimps and cook, stirring occasionally, until they turn pink on all sides, about 3 minutes. Season with salt and pepper, remove the shrimps from the pan but leave the juices.
  • Add the zucchini noodles in the pan, pour the lime juice, turn up the heat and cook, stirring occasionally, for 2-3 minutes.Return the shrimps to the pan and toss to combine. 
  • Season with salt and pepper, and stir in some fresh chopped parsley before serving.


Gamberi e zucchine sono un abbinamento classico per quanto riguarda la pasta. Ed è uno che adoro perché unisce magnificamente i prodotti della terra con quelli del mare. Questo piatto, però, ha un problema, c'è la pasta e, come ho già detto la scorsa settimana, non riesco proprio a mangiarla con questo caldo, e la pasta fredda, almeno che non si tratti di un'insalata di pasta, non è un granché.

Ma è davver uno problema quando uno degli ingredienti principali sono le zucchine ed esistono i noodles di zucchine? Non credo. Infatti, queste sono un'ottima alternativa alla pasta. Non solo rendono il piatto più leggero - che è ottimo sia per questo tempo e se cercate di mantenere la linea - ma sono più adatti all'estate per via di tutte le vitamine e minerale che hanno. E utilizzando le zucchine al posto della pasta ne mangerete sicuramente di più di questa verdura stagionale.

Ma ora parliano del piatto, okay? Come la tradizionale pasta con gamberi e zucchine, questo piatto è saporito, ma anche molto veloce da fare. La parte migliore? È otttimo anche quando si è raffreddato!

INGREDIENTI

  • 2 zucchine piccole
  • 6 gamberi, sgusciati e eviscerati
  • 1/2 cucchiaio olio di cocco
  • 1/2 lime, succo
  • 1 spicchio d'aglio, tritato
  • Prezzemolo fresco
  • Sale
  • Pepe

PROCEDIMENTO
  • Realizzare i noodles con lo spiralizzatore. In alternative, potete utilizzare una mandolina.
  • Scaldate l'olio di cocco in una padella su fiamma bassa. Aggiungete l'aglio e cuocete per 1 minuti, mescolando di tanto in tanto.
  • Aggiungete i gamberi e cuocete, mescolando di tanto in tanto, finché non diventano rosa su tutti i lati, circa 3 minuti. Salate e pepate, togliete i gamberi ma lasciate i succhi.
  • Aggiungete i noodles di zucchina nella padella, versate il succo di lime, alzate la fiamma e cuocete, mescolando di tanto in tanto, per 2-3 minuti. Rimettete i gamberi in padella e spadellate.
  • Aggiustate di sale e pepe, e mescolatevi del prezzemolo fresco tritato prima di servire.
