Red Cabbage Salad with Salmon Sashimi // Insalata di cavolo rosso con sashimi di salmone

I go grocery shopping once a week so there usually are a lot of items on my shopping list. This time there were just a bunch and one of those was fresh tuna. I already had a recipe in mind - actually, it was a remake of a delicious dish I've eaten last December at a restaurant and it involved red cabbage as well - but there was a problem, there was no tuna left. Needless to say, I went home very disappointed.

But I've already made up my mind on having for lunch the day after a crunchy and fresh red cabbage salad with fish. I was really tempted to use canned tuna, but that would have totally ruined the dish I had in mind so I went with salmon instead. Raw salmon. I know eating raw fish with this heat isn't the best thing to do, but I love it and I didn't get food poisoning, so hurray for me!


And since I didn't make the recipe I had in mind, I was able to make another Asian inspired dish and finally try the sesame oil I bought a few weeks ago. Which tastes just like toasted sesame seeds by the way. In other words, it's delicious!


And doesn't this salad look beautiful? I'm not talking about the salmon as I'm still trying to figure out how to properly slice it. Still, it looks pretty good, right?

INGREDIENTS
1 serving
  • 100 g (1 cup) finely shredded red cabbage
  • 80 g (2.8 oz) fresh salmon, skin removed and sliced
  • 1 teaspoon soy sauce
  • 1/2 teaspoon extra virgin olive oil
  • 1/2 teaspoon sesame oil
  • 1/2 lime, juice
  • 3 leaves fresh mint, torn
  • 1/2 tablespoon sliced almonds, toasted

INSTRUCTIONS
  • Add the soy sauce, olive oil, sesame oil and lime juice in a small jar. Put on the lid and shake to combine.
  • In a bowl, add the cabbage and mint, pour the dressing and mix well.
  • Move the salad to a plate, and finish off with the toasted almonds and salmon sashimi. 


Vado a fare spesa una volta alla settimana quindi di solito ci sono molti articoli sulla mia lista della spesa. Questa volta ce n'erano solo alcuni e uno di questi era il tonno fresco. Avevo già una ricetta in mente - in realtà, era un rifacimento di un gustoso piatto che ho mangiato lo scorso dicembre in un ristorante e c'era anche il cavolo rosso - ma c'era un problema, il tonno non c'era più. Inutile dirlo, sono toranta a casa molto delusa.

Ma ormai mi ero fatta l'idea di mangiare per pranzo il giorno dopo un'insalata croccante e fresca di cavolo rosso con del pesce. Sono stata molto tentata di utilizzare il tonno in scatola ma avrebbe soltanto rovinato il piatto che avevo in mente così ho utilizzato il salmone. Salmone crudo. Lo so che mangiare pesce crudo con questo caldo non sia il massimo, ma io l'adoro e non mi sono presa un'intossicazione alimentare, quindi hurrà per me!

E dato che non ho fatto la ricetta che avevo in mente, ho potuto creare un altro piatto di inspirazione asiatica e finalmente utilizzare l'olio di sesamo che ho comprato un paio di settimane fa. Che per la cronaca ha lo stesso sapore dei semi di sesamo tostati. In altre parole è delizioso!

E non è forse bellissima questa insalata? Non sto parlando del salmone dato che ancora devo capire come affettarlo correttamente. Però ha comunque un bell'aspetto, vero?

INGREDIENTI
1 porzione
  • 100 g cavolo rosso tagliato finemente
  • 80 g salmone fresco, senza pelle e affettato
  • 1 cucchiaio salsa di soia
  • 1/2 cucchiaino olio extravergine di oliva
  • 1/2 cucchiaino olio di semi di sesamo
  • 1/2 lime, succo
  • 3 foglie di menta fresca, spezzettate
  • 1/2 cucchiaio mandorle a lamelle, tostate

PROCEDIMENTO
  • Aggiungete la salsa di soia, olio di oliva, olio di sesame e succo di lime in un barattolino. Chiudete con il coperchio e agitatelo per legare gli ingredienti. 
  • In una ctiola, aggiungete il cavolo e la menta, versate il condimento e mescolate bene.
  • Trasferite l'insalata in un piatto e completate con le mandorle tostate e il sashimi di salmone.
