Sweet Potato Mini Pizzas // Pizzette di patata dolce

Friday, September 09, 2016

In a world where people are always looking for the option with less calories - example, eggplant pizzas, zucchini pizzas -, I'm bringing you a more delicious recipe. I'm not saying eggplants or zucchini aren't good, but let's be honest, they cannot compete with sweet potatoes.
Scorrete sotto per l'italiano

So that being said, here's some delicious sweet potatoes mini pizzas. Sure, they may not give you the same satisfaction of a normal pizza, but you'll definitely feel better after eating them because they are healthier.

Also it takes way less time and ingredients to make. In fact, 30 minutes and 5 ingredients are all you need to enjoy this sweet potato mini pizzas.

For the toppings, I decided to go with a classic, mozzarella, tomato and basil, but with a twist. I indeed made them vegan using Verys Vegan Mozzarella Classic instead of actual mozzarella. And if you are one of those people who find mozzarella a little weak on the flavour profile, I suggest you give it a try. Even if you're not vegan.

What I love the most about this pizzas is that they have a quite crispy edge and a soft, delicious centre. And you can make as much as you want. And you can either enjoy them as an appetizer or as part of the main dish with some salad.

By now your mouth will be probably watering so I leave you with the "recipe". And if you want to know more about Verys and their products, you can find all the infos you need on their website or on their Facebook page.

INGREDIENTS

INSTRUCTIONS
  • Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
  • Wash, cut off the very end, peel if not organic, and slice the sweet potato into a half-centimeter (1/4 inch) rounds.
  • Place the slices on the baking sheet in a single layer, sprinkle with salt and roast for 15-20 minutes, or until the sweet potato slices are tender and the edges are starting to brown a little.
  • Remove the tray from the oven, top each disc with a slice of the vegan mozzarella, some cherry tomato quarters and basil. Season with salt and put the pizzas back in the oven for about 5 minutes, until the mozzarella melts.
