Mango and Coconut Pancakes // Pancakes al mango e cocco

It's been a while since I made (sweet) pancakes so I figured it was about time. Also, there's nothing better than starting the day with something so delicious, yet healthy. And everyone can enjoy this recipe, unless you're allergic to coconut. In that case I feel for you.

Anyway, since I'm obsessed with mangoes, I decided I had to make a recipe with them, you know, to show some love. They deserve more than just being eating as they ripen.

The combination with coconut came to my mind because I had an opened can of coconut milk that had to be finished within a few days, and to be honest, it makes these pancakes so tasty!




Considering how easy pancakes are to make, it wasn't very hard to make them vegan. Not that making them gluten-free was though. I did that before with the blueberry buckwheat pancakes. Only this time I used the quinoa flour that has been sitting in the pantry for months. And of course I've fallen in love with it because of its flavour.




And have you seen how thick these pancakes are? I still can't believe it. Whenever I make them, I end up with something that looks more like crepes than pancakes.

INGREDIENTS
1 serving
  • 50 g (scart 1/4 cup) quinoa flour
  • 60 ml (1/4 cup) coconut milk
  • 1 small mango, pureed
  • 4 g (1 teaspoon) baking powder
  • 1/2 flax egg (1/2 tablespoon flax meal + 1 1/2 tablespoons water rested for 10 minutes)
  • 1 teaspoon coconut butter, melted
  • Shredded coconut, to garnish
  • Salt

INSTRUCTIONS
  • In a bowl, whisk to combine the quinoa flour, baking powder, and a pinch of salt. Set aside.
  • In another bowl, whisk together the flax egg, coconut milk, coconut butter, 4 tablespoon of pureed mango and 2 tablespoon of water. Whisk this wet mixture into the dry ingredients, and stir until combined. 
  • Preheat a nonstick skillet over low heat. Give the batter a slight swirl, and drop two tablespoons of batter into the pan. Cook for 2 to 3 minutes until small bubbles form on the surface of the pancake, and flip. Cook on the other side for 1 to 2 minutes, or until golden.
  • Serve the pancakes with the remaining pureed mango and shredded coconut.


È da un po' che non faccio pancakes (dolci), quindi ho pensato che era giunto il momento. Inoltre, non c'è niente di meglio che iniziare la giornata con qualcosa di così delizioso, ma sano. E tutti possono gustare questa ricetta, almeno che siate allergici al cocco. In questo caso mi dispiace per voi.

In ogni caso, dal momento che sono ossessionata con i manghi, ho deciso di utilizzarli in una ricetta, sapete, per mostrare un po' di amore. Si meritano di più di essere semplicemente mangiati appena maturi.

La combinazione con il cocco mi è venuta in mente perché avevo una confezione di latte di cocco che doveva essere consumata entro pochi giorni, e a dir la verità, rende questi pancakes così buoni!

Considerando quanto sono facili da fare i pancakes, non è stato difficile renderli vegani. Non che farli senza glutine fosse difficile. Lo già fatto in precedenza con i pancakes di mirtilli e grano saraceno. Solo questa volta ho utilizzato la farina di quinoa che se n'è stata in dispensa per mesi. E ovviamente mi ci sono innamorata per via del suo sapore.

E avete visto quanto spessi sono questi pancakes? Ancora non ci credo. Oggi volta che li faccio, finisco sempre con qualcosa che assomiglia più a crepes che pancakes.

INGREDIENTI
1 porzione
  • 50 g farina di quinoa
  • 60 ml latte di cocco
  • 1 mango piccolo, frullato
  • 4 g lievito in polvere
  • 1/2 flax egg (1/2 cucchiaio semi di lino tritati + 1 1/2 cucchiai di acqua fatto riposare per 10 minuti)
  • 1 cucchiaio burro di cocco, sciolto
  • Cocco grattugiato, per guarnire
  • Sale

PROCEDIMENTO
  • In una ciotola, mescolate la farina di quinoa, lievito in polvere, e un pizzico di sale. Mettete da parte.
  • In un'altra ciotola, mescolate il flax egg, latte di cocco, burro di cocco, 4 cucchiai di mango frullato e 2 cucchiai di acqua. Aggiungete questo composto agli ingredienti secchi, e mescolate finché omogeneo.
  • Fate scaldare una padella su fuoco basso. Mescolate leggermente l'impasto, e versate due cucchiai di impasto nella padella. Cuocete per 2-3 minuti finché si formeranno delle piccole bolle sulla superficie dei pancakes, e girateli. Cuocete dall'altra parte per 1-2 minuti, o finché dorati.
  • Servite i pancakes con il rimanente mango frullato e cocco grattugiato.
