Oven Baked Friggitelli with Buckwheat and Spinach // Friggitelli al forno con grano saraceno e spinaci

When wandering around the supermarket I see something green, it becomes almost impossible for me to resist, especially if we are talking about beautiful green bell peppers. But friggitelli aren't just green bell peppers, they have a slightly sweet note which makes them even more tasty and desirable.


Of course I did not go home empty-handed, so I found myself with some friggitelli and the need to create a new recipe. Frying would have been the easiest, but also the less healthy way, so I chosed to stuff them. After several itches, among which the irregular shape of my friggitelli and the fact that they weren't big enough to hold a lot of filling, I ended up making these oven baked friggitelli with buckwheat and spinach.



The buckwheat groats, boiled but not toasted, do not have an extremely strong flavour so they don't overshadow the sweetness of the friggitelli, it is indeed enhanced by them, but the best part has yet to come, the filling. Fresh baby spinach, red onion and Verys Alternative Blue Cheese give these peppers an extra kick. The whole thing topped with sweet paprika and chives.

INGREDIENTS
1 serving
  • 60 g (1/4 cup) buckwheat groats
  • 60 g Verys Alternative Blue Cheese
  • 25 g (3/4 cup) baby spinach
  • 2 friggitelli
  • 1/4 red onion
  • Sweet paprika
  • Chives
  • Salt

INSTRUCTIONS
  • Preheat the oven to 180°C (350°F).
  • Bring a pot of water to a boil. Add the buckwheat, and salt and cook for 10 minutes. Remove from the heat and drain.
  • Meanwhile, dice the onion and roughly chop the spinach. In a bowl, add the onion, spinach, blue of rice, a pinch of salt, and stir to combine.
  • Wash the friggitelli, cut them in halves, remove seeds and stems and pat-dry them.
  • Once the buckwheat is cooked, transfer it into an oven-safe cocotte and spread it evenly using a spoon. Place the friggitelli halves on top of the buckwheat and stuff them with the spinach and Verys Alternative Blue Cheese mixture. Fill the holes with the remaining mixture.
  • Put in the oven and cook for 20 minutes. Sprinkle with sweet paprika and freshly cut chives, and serve.


Quando girovagando per il supermercato mi imbatto in qualcosa di verde, diventa quasi impossibile per me resistere, specialmente se si tratta di bellissimi peperoni verdi. Ma i friggitelli non sono semplici peperoni verdi, hanno una nota leggermente dolce, il che li rende ancora più gustosi e desiderabile.

Ovviamente non sono tornata a casa a mani vuote, e così mi sono ritrovata con dei friggitelli e la necessità di creare una nuova ricetta. Friggerli sarebbe stata la strada più semplice, ma anche la meno sana, così ho scelto la strada del ripieno. Dopo diversi intoppi, tra cui la forma irregolare dei miei friggitelli e il fatto che non erano grandi abbastanza per contenere molto ripieno, sono finita per fare questi friggitelli al forno con grano saraceno e spinaci.

Il grano saraceno, bollito senza tostatura, non ha un sapore eccessivamente forte, quindi non sovrasta la dolcezza dei friggitelli, anzi la esalta, ma la parte migliore deve ancora arrivare, il ripieno. Spinacini freschi, cipolla rossa e Verys Verde di riso danno a questi peperoni una marcia in più. Il tutto servito con paprica dolce ed erba cipollina.

INGREDIENTI

  • 60 g grano saraceno
  • 60 g Verys Verde di riso
  • 25 g spinacini
  • 2 friggitelli
  • 1/4 cipolla rossa
  • Paprica dolce
  • Erba cipollina
  • Sale

PROCEDIMENTO
  • Preriscaldate il forno a 180°C.
  • Portate ad ebollizione una pentola con abbondante acqua. Aggiungete il grano saraceno e sale, e cuocete per 10 minuti. Rimuovete dal fuoco e scolate.
  • Nel frattempo, riducete la cipolla a cubetti e tritate grossolanamente gli spinaci. In una ciotola, unite la cipolla, spinaci, verde di riso, un pizzico di sale e mescolate.
  • Lavate i friggitelli, tagliateli a metà, rimuovete i semi e i gambi ed asciugateli.
  • Quando il grano saraceno è cotto, trasferitelo in una cocotte e distribuitelo in modo uniforme utilizzando un cucchiaio. Disponete le metà dei friggitelli sopra al grano saraceno e riempiteli con il mix a base di spinaci e Verys Verde di riso. Riempite i buchi con il composto rimanente.
  • Mettete in forno e cuocete per 20 minuti. Spolverizzate con la paprica dolce, e erba cipollina tagliata al momento e servite.

  3. Devo ammettere che io scelgo sempre la strada più semplice e meno sana, ma ai friggitelli fritti proprio non resisto!
