Maple Balsamic Tempeh with Broccoli and Turmeric Brown Rice // Tempeh allo sciroppo d'acero e aceto balsamico con broccoli e riso integrale alla curcuma

After getting inspired for last Monday's wraps, I went back on Brittany's blog, Eating Bird Food, looking for more yummy recipes, and guess what I've found, a lot of deliciously-looking recipes some of which call for tempeh. And since I'm still no tempeh expert I decided to try another one, her maple balsamic tempeh bowls with pumpkin rice and broccoli.

As you can tell by the name of my recipe, I yet again didn't follow the recipe to the letter. I swapped the pumpkin rice for brown rice cooked with fresh turmeric; I know it's not the same, but it's really delicious and the easiest way to bring brown rice to the next level. And my favourite as well.


Anyway, the rice isn't the star of the dish, that would be the tempeh. I do realise I'm not very accountable for it since this is only my second time eating tempeh, but this was the most delicious tempeh I've ever had. And I'm pretty sure it won't ever, ever get any better than this.


Sweet and savoury because of the maple balsamic glaze it is surrounded by, this tempeh is addicting. So addicting you'd want to eat it all day long. Don't believe me? Try it for yourself! 

INGREDIENTS
1 serving
For the tempeh
  • 75 g (2.65 oz) of tempeh
  • 1/2 tablespoon of maple syrup
  • 1/2 teaspoon balsamic vinegar
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon soy sauce

To serve
  • 1/2 broccoli head, cut into florets
  • 80 g (1/2 cup) Basmati brown rice
  • 1 piece of fresh turmeric, grated
  • Salt
  • Black pepper

INSTRUCTIONS
For the tempeh
  • Cut the tempeh into small triangles.
  • Combine the maple syrup, balsamic vinegar, oil and soy sauce.
  • Place the tempeh in a shallow dish and pour the marinade over, toss to coat and let the tempeh marinate in the fridge for at least an hour, stirring a couple of times.
  • Drain the tempeh from the marinade. Heat a non-stick pan on medium heat, add the tempeh and cook for 2-3 minutes on each side, or until brown. Pour the marinade and let it thicken.

  • Meanwhile, add some water in a steamer and bring to a boil. Add the broccoli and steam for 5 minutes, or until tender.
  • Add the rice, 240 ml (1 cup) of water and the turmeric to a pot, bring to a boil, cover and simmer for about 20 minutes, until the water has been absorbed and the rice is cooked. Fluff with a fork and season with salt and pepper.

  • Move the rice to a bowl, add the steamed broccoli and glazed tempeh and serve.


Dopo essere stata ispirata per gli wraps di lunedì scorso, sono tornata sul blog di Brittany, Eating Bird Food, a cercare altre ricette gustose, e indovinate un po' cosa ho trovato, tante ricette dall'aspetto delizioso alcune delle quali fatte con il tempeh. E dato che ancona non sono un'esperta di tempeh ho deciso di provarne un'altra, il suo tempeh allo sciroppo d'acero e aceto balsamico con riso alla zucca e broccoli.

Come potete vedere dal nome della mia ricetta, ancora una volta non ho seguito la ricetta alla lettera. Ho sostituito il riso alla zucca con riso integrale cotto con della curcuma fresca; lo so che non è lo stesso, ma è molto buono e il modo più semplice per migliorare il riso integrale. E anche il mio preferito.

Comunque sia, il riso non è il protagonista del piatto, che sarebbe il tempeh. Lo so che non sono molto affidabile dato che è soltanto la seconda volta che mangio tempeh, but questo era il tempeh più buono che ho mai mangiato. E sono abbastanza sicura che non diventerà mai e poi mai più buono di così.

Dolce e salato per via della glassa di sciroppo d'acero e aceto balsamico dalla qualche è circondato, questo tempeh crea dipendenza. Così tanta che non vorreste mangiare altro tutto il giorno. Non mi credete? Provatelo!

INGREDIENTI
1 porzione
Per il tempeh
  • 75 g di tempeh
  • 1/2 cucchiaio di sciroppo d'acero
  • 1/2 cucchiaino di aceto balsamico
  • 1 cucchiaino di olio extravergine di oliva
  • 1 cucchiaino di salsa di soia

Per servire
  • 1/2 broccolo, tagliato in cimette
  • 80 g di riso integrale Basmati
  • 1 pezzo di curcuma fresca, grattato
  • Sale
  • Pepe nero

PROCEDIMENTO
Per il tempeh
  • Tagliate il tempeh in piccoli triangoli.
  • Unite lo sciroppo d'acero, l'aceto balsamico, l'olio di oliva e la salsa di soia.
  • Mettete il tempeh in un piatto poco profondo e versatevi sopra la marinata, mescoalte per ricorpite e lasciate marinare il tempeh in frigo per almeno un'ora, mescolando un paio di volte.
  • Scolate il tempeh dalla marinata. Scaldate una padella anti-aderente su fiamma media, aggiungete il tempeh e cuocete per 2-3 minuti su ogni lato, o finché non è colorato. Versate la marinata e fate addensare.

  • Nel frattempo, aggiungete dell'acqua in una vaporirera e portate a bollore. Aggiungete i broccoli e cuocere per 5 mitnui, o finché non sono teneri.
  • Aggiungete il riso, 240 m di acqua e la curcuma in una pentola, portate a bollore, coprite e fate sobbollire per circa 20 minuti, finché l'acqua non è stata assorbita e il riso è cotto. Sgranate con una forchette, salate e pepate.

  • Trasferite il riso in una ciotola, aggiungete i broccoli al vapore e il tempeh glassato e servite.

    1. Il tempeh è fatto con fagioli di soia cotti e fermentati. L'ho appena scoperto e me ne sono innamorata.

  4. Confesso sono andata a cercare cosa sia il tempeh. Mi dice che è anche chiamato carne di soja e qualcosa si ho visto ma quello che dici tu fagioli cotti ecc. no non l'ho trovato proverò a vedere. Sapori nuovi sempre ben accetti anche se conosco molto di questo tipo di cucina. Grazie e buona serata.
