Frittata con viticchi

No, I am not making up words. Now I'm not pretty sure you are wondering what viticchi are. Well, they are the shoots of a climbing shrub, the Clematis vitalba, also known as Old Man's Beard and Traveller's Joy, according to Wikipedia. In France, they know it as "Herbe aux gueux" because is poisonous if eaten raw. The shoots, however, are not harmful if fresh, tender, cooked and eaten in moderation.


But this still doesn't explain the name I used, which is the way they are called in my town. At least that's how my grandma calls them, and since this is her very own recipe, I figured I should go for frittata con viticchi instead of vitalbe, which is the name they are mostly known as across Italy.

That said, this recipe is super-easy and quick, you just need a skillet and a few ingredients, eggs, viticchi and spring garlic which gives the frittata a great flavour boost.


I know that some boil the shoots before using them because, apparently, they are a little poisonous, but my grandma has cooked them just in some oil for her entire life and she is as healthy as a horse. My mother boils them because she doesn't like the bitter taste, but I guess they end up pretty tasteless that way.

INGREDIENTS
1 serving
  • 2 eggs
  • 1 big handful of viticchi (vitalbe, old man's beard, traveller's joy) shoots
  • 3 sprigs of spring garlic, minced
  • 1/2 teablespoon extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
  • Heat the oil in a non-sticking pan. Add the viticchi and the minced garlic and cook for 1 minute on high heat. Cover, reduce to low and cook for 3-5 minutes, until the shoots are tender.
  • Pour the eggs, beaten and seasoned with salt and pepper, and cook, covered, until the top is firm. Turn the frittata with the help of the lid and finish cooking.


No, non sto inventando le parole. Ora sono abbastanza sicura che vi state chiedendo con sono i viticchi. Dunque, sono i germogli di una piata rampicante, la Clematis vitalba, conosciuta anche come vitalba. In Francia, la conoscono come "Herbe aux gueux" perché è velenosa se mangiata cruda. I germogli, però, non sono dannosi se freschi, teneri, cotti e mangiati in moderazione.

Ma questo ancora non spiega il nome che ho utilizzato, che è come sono chiamati nella mia città. O almeno è così che li chiama mia nonna, e dato che questa è proprio la sua ricetta, ho ritenuto giusto chiamarla frittata con viticchi invece di vitalbe.

Detto questo, questa ricetta è super-semplice e veloce, avrete bisogno soltanto di una padella e di alcuni ingredienti, uova, viticchi e aglio fresco che aggiunge alla frittata molto sapore.

So che delle persone sbollentano i germogli prima di utilizzarli perché, a quanto pare, sono leggermente velenosi, ma mia nonna l'ha cotti soltanto in un po' d'olio per tutta la sua vita ed è sana come un pesce. Mia madre li sbollenta perché non le piace il sapore amarognolo, ma penso che diventino alquanto insapori così.

INGREDIENTI
1 porzione
  • 2 uova
  • 1 grande manciata di viticchi (vitalbe)
  • 3 foglie di aglio fresco, tritate
  • 1/2 cucchiaio di olio extravergine di oliva
  • Sale
  • Pepe

PROCEDIMENTO
  • Scaldate l'olio in una padella anti-aderete. Aggiungete i viticchi e l'aglio tritato e cuocete per 1 minuti su fiamma alta. Corpite, abbassate la fiamma al minimo e cuocete per 3-5 minuti, finché i germogli non sono teneri.
  • Versate le uova, sbattute, salate e pepate, e cuocete, con coperchio, finché la parte superiore non si è rassodata. Girate la frittata con l'aiuto del coperchio e completate la cottura.
