Earl Grey Zucchini with Mint Vinaigrette // Zucchine all'Earl Grey con vinaigrette alla menta

A week ago I was scrolling down the blogs I follow when I saw a pretty interesting recipe, Monica's bergamot mint zucchini with hemp seeds. Cool, I thought, all ingredients I love and I'll finally have an excuse to buy a bergamot. Then I read the recipe and guess what it didn't call for, bergamot! To add the flavour, she used bergamot flavoured olive oil. Which of course I don't have.

But I love bergamot and I love tea, and since Earl Grey is my favourite flavoured tea - after Jasmine, that will always be my absolute favourite - there's always some in my pantry. And that's when I decided I would use tea as a cooking liquid.


But is zucchini we are talking about and you don't need water to sautée. Steaming, however, is a great way to cook zucchini and I was sure those aromatic tea leaves would add a lot of flavour to the zucchini. And so it was. These were indeed the best steamed zucchini I've ever eaten. And quite possibly the best steamed vegetables ever.

The mint vinaigrette is perfect to keep this side dish healthy and delicious. Since you are not going to cook the oil, all of its nutrients will be preserved, and the mint adds freshness to the bergamot scent.


P.S. I forgot there were hemp seeds in the original recipe so I didn't use them. But I'm sure they taste amazing with these zucchini.

INGREDIENTS
1 serving
  • 1 medium zucchini, cut into 1 cm (0.4 inches) thick slices
  • 2 teaspoons of loose Earl Grey
  • 1 teaspoon of fresh minced mint
  • 2 teaspoons of extra virgin olive oil
  • 1 teaspoon of apple cider vinegar
  • Salt

INSTRUCTIONS
  • Add 240 ml (1 cup) of water and the tea to a steamer and bring to a boil. Add the zucchini and let steam for 5-7 minutes or until tender.
  • Meanwhile, add the mint, the olive oil, the vinegar and a pinch of salt in a small jar, put on the lid, and shake.
  • Add the steamed zucchini in a bowl, season with the vinaigrette and serve.


Una settimana fa stavo scorrendo tra i blog che seguo quando ho visto una ricetta alquanto interessante, le zucchine al bergamotto e menta con semi di canapa di Monica. Che bello, ho pensato, tutti ingredienti che adoro e finalmente avrò una scusa per comprare un bergamotto. Poi ho letto la ricetta e indovinate un po' cosa non c'era, il bergamotto! Per aggiungete il sapore, ha utilizzato un olio di olive aromatizzato al bergamotto. Che ovviamente non ho.

Ma adoro il bergamotto e adoro il tè, e dato che l'Earl Grey è il mio tè aromatizzato preferito - dopo il Jasmine, che sarà sempre il mio preferito in assouluto - ne ho sempre un po' nella mia dispensa. Ed ecco quando mi è venuta l'idea di utilizzare il tè come liquido di cottura.

Ma stiamo parlando di zucchine e non c'è bisogno di acqua per saltarle. La cottura al vapore, d'altro canto, è ottima per le zucchine ed ero sicura che quelle foglie di tè aromatiche avrebbero aggiunto tanto sapore alle zucchine. E così è stato. Queste erano decisamente le miglior zucchine al vapore che ho mai mangiaro. E molto probabilmente le miglior verdure al vapore di sempre.

La vinaigrette alla menta è perfetta per mantenere salutare e gustoso questo contorno. Dato che non cuocete l'olio, tutti i suoi nutrienti rimarranno intatti, e la menta aggiunge freschezza all'aroma di bergamotto.

P.S. Mi sono dimenticata che c'erano i semi di canapa nella ricetta originale quindi non li ho utilizzati. Ma sono sicura che stanno benissimo con queste zucchine.

INGREDIENTI
1 porzione
  • 1 zucchina media, tagliata in fette di 1 cm
  • 2 cucchiaini di Earl Grey sfuso
  • 1 cucchiaino di menta fresca tritata
  • 2 cucchiaini di olio extravergine di oliva
  • 1 cucchiaino di aceto di mele
  • Sale

PROCEDIMENTO
  • Aggiungete 240 ml di acqua e il tè in una vaporiera e portate a bollore. Aggiungete le zucchine e fate cuocere per 5-7 minuti o finché non saranno tenere.
  • Nel frattempo, aggiungete la menta, l'olio di oliva, l'aceto e un pizzico di sale in un barattolino, mettete il coperchio e shakerate.
  • Aggiungete le zucchine al vapore in una ciotola, condite con la vinaigrette e servite.
