Detox Quinoa Bowl

Monday, May 01, 2017

Just in case you're new, you haven't been around for a while or you have the memory of a carrot, I love bowls or as I previously called them, an excuse to be lazy. And this time I'm bringing my laziness to the next - I could even say ultimate - level with this detox quinoa bowl.

Don't let you scare by the word "detox", this dish is pretty darn delicious and I'm not the one to be credited for that. That's all on the wonderful ingredients I used, a combination of white, red and black quinoa, with steamed cauliflower, red cabbage and sweet potato, and seasoned with just some fresh mint, a squeeze of lemon juice which helps absorbing all the nutrients, and a grind of Himalayan salt.

This bowl is great to give your body a break. A break from fats, from refined carbs and from animals products that often cause inflammation in the body. It's a chance to eat healthy without giving up the joy of eating.

And doesn't all that colour make you instantly happy? It works for me.

INGREDIENTS
1 serving
  • 60 g (1/3 cup) quinoa mix
  • 70 g (3/4 cup) cauliflower florets
  • 1/4 red cabbage, chopped
  • 1 small sweet potato, peeled and diced
  • Fresh mint
  • Lemon juice
  • Himalayan salt

INSTRUCTIONS
  • Rinse the quinoa, place it in a pot with 240 ml (1 cup) of water and bring to a boil. Cover and simmer for 20-25 minutes. Drain any excess water.
  • Bring to a boil some water in a steamer, and steam the vegetables: 7-10 minutes for the cauliflower, 5 minutes for the sweet potato, 3-4 minutes for the cabbage.
  • Move the quinoa to a bowl, add the steamed vegetables, mint to taste, squeeze some lemon juice on top, season with salt and serve.

A me sì.

INGREDIENTI
1 porzione
  • 60 g quinoa mix
  • 70 g cavolfiore a cimette
  • 1/4 cavolo cappuccio rosso, spezzettato
  • 1 piccola patata dolce, pelata e tagliata a cubetti
  • Menta fresca
  • Succo di limone
  • Sale dell'Himalaya

PROCEDIMENTO
Scolate l'eventuale acqua in eccesso.
