Brown Rice Artichoke Risotto // Risotto integrale ai carciofi

I am a thief. Let me explain. A few days ago, while on my daily morning walk, I noticed a few artichokes on my neighbour's land. Although I was very tempted to pick them, I let them be because they were not mine. However, days have passed, and there they still were, staring at me, and I couldn't help but bring them home. So, yeah, I am a thief, an artichoke thief.

If I have to be honest though, I'm pretty sure they still would be there, waiting to hit puberty aka grow a beard. So, I really did them a huge favour by using them to make this delicious and creamy brown rice risotto.


With just a few simple ingredients, I balanced the typical bitter taste of artichokes and turned them into a quite delicate dish that will definitely help you to eat more of this precious vegetable. Because, just in case you didn't know, artichokes have a lot of health benefits, from detoxifying the liver to helping digestion.


INGREDIENTS
1 serving
  • 75 g (1/3 cup + 1 tablespoon) of Roma brown rice
  • 2 small artichokes
  • 1/4 red onion
  • 2 sprig of fresh thyme
  • 1/2 tablespoon of extra virgin olive oil
  • 5 g (1 tablespoon) grated Grana Padano (optional)
  • 530 ml (2 + 1/4 cups) of vegetable broth
  • Lemon juice
  • Salt

INSTRUCTIONS
  • In a saucepan, bring the broth to a simmer. Remove from the heat, cover and keep warm.
  • Mince the onion. Wash the artichokes, remove the outer, tougher leaves, then cut off the tips and the bottom. Cut the artichokes in half, and repeat until you get eight wedges out of each artichoke. Put them in a bowl with water and lemon juice.
  • Heat the oil in a pot over low heat. Add the onion and cook, stirring, for a minute. Add the drained artichokes, the leaves of a sprig of thyme and cook, stirring, for 2 minutes. Add the rice and toast it, stirring, for 1-2 minutes. Cover with broth and bring to a simmer. Cook the risotto, stirring occasionally, for 20-25 minutes, adding a ladle of hot broth only when the previous one has been absorbed.
  • Stir in the cheese, if using, season with salt, if needed, then cover and let it rest for a minute.
  • Serve the risotto sprinkled with the remaining thyme leaves.


Sono una ladra. Fatemi spiegare. Alcuni giorni fa, mentre stavo facendo la mia camminata mattutina, ho notato diversi carciofi nel terreno del mio vicino. Anche se ero molto tentata di raccoglierli, li ho lasciati in pace perché non erano miei. Ma i giorni sono passati ed erano ancora li, a fissarmi, e non ho potuto non portarli a casa. Dunque, sì, sono una ladra, una ladra di carciofi.

Però se devo essere onesta, sono sicura che starebbero ancora li, aspettando di raggiungere la pubertà in altre parole la crescita della barbetta. In partica ho fatto loro proprio un grande favore utilizzandoli per fare questo gustoso e cremoso risotto integrale.

Con giusto alcuni semplici ingredienit, ho bilanciato l'amaro dei carciofi e li ho trasformati in un piatto alquanto delicato che vi aiuterà di certo a mangiare di più questa preziosa verdura. Perché, nel caso in cui non lo sapevate, i carciofi hanno tanti benefici, dal depurare il fegato ad aiutare la digestione.

INGREDIENTI
1 porzione
  • 75 g di riso Roma integrale
  • 2 carciofi piccoli
  • 1/4 di cipolla rossa
  • 2 rametti di timo fresco
  • 1/2 cucchiaio di olio extravergine di oliva
  • 5 g di Grana Padano grattugiato (facoltativo)
  • 530 ml di brodo vegetale
  • Succo di limone
  • Sale

PROCEDIMENTO
  • In un pentolino, portate ad un leggero bollore il brodo. Togliete dal fuoco, coprite e tenete in caldo.
  • Tritate la cipolla. Lavate i carciofi, togliete le foglie esterne dure, quindi tagliate le punte e il fondo. Tagliate i carciofi a metà, e ripetete finché non avrete otto spicchi per ogni carciofo. Metteteli in una ciotola con acqua e succo di limone. 
  • Scaldate l'olio in una pentola su fiamma bassa. Aggiungete la cipolla e cuocete, mescolando, per un minuto. Aggiungete i carciofi scolati, le foglie di un rametto di timo e cuocete, mescolando, per 2 minuti. Aggiungete il riso e tostatelo, mescolando, per 1-2 minuti. Coprite con il brodo e portate ad un leggero bollore. Cuocete il risotto, mescolando di tanto in tanto, per 20-25 minuti, aggiungendo un mestolo di brodo soltanto quando il precedente sarà stato assorbito.
  • Unite il formaggi, se lo utilizzate, aggiustate di sale, quindi coprite e lasciate riposare per un minuto.
  • Servite il risotto cosparso con le restanti foglie di timo.
