Black Rice Sushi Bowl with Salmon and Avocado // Sushi bowl di riso nero con salmone ed avocado

Wednesday, May 17, 2017

I did it. I finally did it. It took me some time, but I've finally made sushi at home. That's right, this time I didn't use smoked salmon like I always do, but I went for actual raw salmon. And it was glorious.

The best part about this sushi? It isn't a sushi roll, but a sushi bowl which means you'll spare yourself the struggle of the rolling process. Not to mention the cut, when the rolls are most likely to explode. Because this doesn't happen only to me, right?!

Since this was a last-minute sushi bowl, I used the vegetables I had on hand and kept it simple with carrots and cucumbers. But you can use any vegetables you like, from bell peppers to cabbage to mushrooms. In my opinion, though, it works better if they are crunchy so they make a nice contrast with the other ingredients.

And speaking of contrasts, guess what colour looks great with the ingredients I picked... black. That's why I picked black rice. And also because it has way more flavour than white or brown rice, and it's more nutritious. Not to mention the wonderful smell it will leave in your house.

INGREDIENTS
1 serving
  • 75 g (1/3 cup + 1 tablespoon) of black rice (I used Venere)
  • 80 g (2.8 oz) of fresh salmon
  • 1/2 avocado
  • 1/2 carrot
  • 1/2 cucumber
  • White sesame seeds
  • Soy sauce

INSTRUCTIONS
  • Add the rice in a pot with 190 ml (2/3 cup + 2 tablespoons) of water and bring to a boil. Reduce the heat, cover and simmer for 18 minutes or until the water has been absorbed and the rice is cooked. Let cool down the rice.
  • Meanwhile, dice the cucumber. Peel the carrot, then cut it into ribbons using the potato peeler. Slice the avocado. Thinly slice the salmon.
  • Add the rice to a bowl and place the prepared ingredients on top. Sprinkle with sesame seeds, drizzle with soy sauce and serve.

L'ho fatto. L'ho finalmente fatto.

Perché non succede soltanto a me, vero?!
