Spring Sorghum and Mackerel Bowl // Bowl primaverile di sorgo e sgombro

Do you know or want to know why I love bowls so much? Well, I'm going to tell you anyway. Because they allow me to throw, quite literally, a bunch of ingredients together, without doing any real job. They are my excuse to be lazy.

That, however, doesn't mean that they can't be delicious. After all, that's quite the point of my cooking, making simple and healthy yet delicious recipes. And this time I took advantage of spring cleaning to do that. That's why you won't find (almost) any fresh ingredient in this bowl. And that's my way to prove that frozen vegetables and canned fish can taste good if used in the right way.


Since it's Spring I went with some of those yummy and green vegetables this wonderful season has to offer: artichokes which are great to detoxify the body, especially the liver; fava beans, rich in minerals such as iron and manganese, and dietary fibres; and peas who among all their benefits have anti-aging properties. To that, add the omega-3 from the mackerel, the vitamins, minerals and delicious taste of the sorghum and you have a delicious and nutritious lunch/dinner.


P.S. Did you know that sometimes frozen vegetables can have more nutrients than fresh ones? How is that? Because the first, most of the time, are frozen after being picked, while the latter stays on the shelves for way longer.

INGREDIENTS
1 serving
  • 60 g (1/3 cup) hulled sorghum
  • 2 canned mackerel fillets, flaked
  • 4 frozen artichoke wedges
  • 50 g (1/2 cup) frozen shelled fava beans
  • 50 g (1/2 cup) frozen shelled peas
  • 1/2 yellow onion, roughly chopped
  • 1/2 tablespoon extra virgin olive oil
  • Sweet paprika
  • Balsamic vinegar
  • Salt

INSTRUCTIONS
  • Cook the sorghum according to the instructions on your package. I soaked mine for 3 hours in cold water, drained, and cooked in a pot, on low heat, with 240 ml (1 cup) of salted water for about 30 minutes.
  • Heat the olive oil in a skillet over medium heat. Add the onion and sautée for 2-3 minutes, until it starts to brown. Add the frozen artichokes and fava beans and cook for 4 minutes, adding a splash of water if needed. Add the peas and continue cooking for 3 minutes
  • Add the cooked sorghum and the mackerel, season with salt and sweet paprika and stir well.
  • Move to a bowl, drizzle with balsamic vinegar and serve.

Sapete o volete sapere perché adoro le bowls così tanto? Beh, ve lo dico lo stesso. Perché mi permettono di ammassare, quasi letteralmente, un branco di ingredienti insieme, senza fare un vero e proprio lavoro. Sono la mia scusante per essere pigra.

Questo, però, non significa che non possono essere gustose. Dopo tutto è quello il punto della mia cucina, creare piatti semplici e salutari ma che siano anche gustosi. E questa volto ho approfittato delle pulizie di primavera per farlo. Ecco perché non troverete (quasi) nessun ingrediente fresco in questa bowl. Ed è il mio modo di dimostrare che le verdure congelate e il pesce in scatola possono essere buoni se utilizzati nel modo giusto.

Dato che è primavera ho optato per quelle verdure buone e verdi che questa fantastica stagione ha da offrirci: carciofi, i quali sono ottimi per disintossicare il corpo, soprattutto il fegato; fava, ricca di minerali come ferro e manganese e fibre; e piselli che tra tutti i loro benefici hanno proprietà anti-invecchiamento. A questo, aggiungete gli omega-3 dello sgombro, le vitamine, minerale e sapore ottimo del sorgo e avete un gustoso e nutriente pranzo/cena.

P.S. Lo sapetave che a volte le verdure congelate possono avere più nutrienti di quelle fresche? Come mai? Perché le prime, la maggior parte delle volte, sono congelate dopo la raccolato, mentre le seconde restano sugli scaffali per troppo tempo.

INGREDIENTI
1 porzione
  • 60 g sorgo decorticato
  • 2 filetti sgombro in scatola, a scaglie
  • 4 spicchi di carciofi congelati
  • 50 g fave congelate
  • 50 g piselli congelati
  • 1/2 cipolla dorata, tritata grossolanamente
  • 1/2 cucchiaio olio extravergine di oliva
  • Paprica dolce
  • Aceto balsamico
  • Sale

PROCEDIMENTO
  • Cuocete il sorgo seguendo le istruzioni sul vostro pacchetto. Io l'ho messo in ammollo per 3 ore in acqua fredda, scolato e cotto in una pentola, su fiamma bassa, con 240 ml di acqua salsata per circa 30 minuti.
  • Scaldate l'olio di oliva in una padella su fiamma media. Aggiungete la cipolla e rosolatela per 2-3 minuti, finché inizia a colorirsi. Aggiungete i carciofi e fave congelati e cuocete per 4 minuti, aggiungendo un goccio di acqua se necessario. Aggiungete i piselli e continuate a cuocere per 3 minuti.
  • Aggiungete il sorgo cotto e lo sgombro, salate, insaporite con la paprica dolce e mescolate bene.
  • Trasferite in una ciotola, condite con un filo di aceto balsamico e servite.
