Spaghetti with Agretti // Spaghetti con agretti

Friday, April 07, 2017

I'm back. And I've brought agretti with me. Again. What can I say, I love them! And it's such a shame they are available for such a short period of time. Anyway, since they are an Italian vegetable, I decided to (re)make and share with you this spaghetti with agretti.

If you are looking for a delicious pasta dish that it's also fast and easy to make - although I have to admit cleaning the agretti can be very annoying -, well, in that case, you have to try this recipe. And it isn't only delicious, but good for you as well.

I'm not sure if I've mentioned this before, but agretti are rich in vitamin A, vitamin B, vitamin C, minerals such as potassium, calcium and iron, and they are cleansing as well. In other words, they are the perfect food to do some Spring cleaning.

INGREDIENTS
1 serving
  • 80 g (2.8 oz) whole wheat spaghetti
  • 1 handful (130 g // 4.6 oz) agretti
  • 1 Borettana onion
  • 1/2 garlic clove
  • 1/2 tablespoon extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
  • Cut off the roots of the agretti, the thoroughly wash them and pat them dry. Finely chop the onion and garlic.
  • Bring to a boil a pot of salted water. Add the agretti and cook for 2 minutes. Drain them with a slotted spoon and cut them in half.
  • Bring to a boil the cooking water of the agretti, add the spaghetti and cook for 10-12 minutes, or according to the instructions on your package.
  • Meanwhile, heat the oil, garlic and onion in a pan on medium heat, and cook for a minute. Add the agretti and sautée for 2 minutes. Adjust with salt and pepper.
  • Drain the pasta al dente and move it to the pan along with some cooking water. Toss to combine and serve.

Sono tornata. E ho portato gli agretti con me. Di nuovo. Cosa posso dire, li adoro!
