Miso Coconut Roasted Mushrooms // Funghi arrostiti al miso e cocco

I don't know about you, but I could eat mushrooms all day long, especially if they are incredibly cute like tiny cremini mushrooms. I love them so much, I'd be able to make a meal out of them. And that's exactly what I did with these Miso Coconut Roasted Mushrooms.

Just 6 ingredients and 30 minutes of your time, and I ensure you'll fall in love with mushrooms - if you aren't already!


The savouriness of the Hatcho miso pairs well with the sweetness of the coconut, and the fresh cilantro and sweet paprika make it a wonderful experience. And the texture? They are incredibly soft on the outside, and a little bit crunchy on the inside. Believe me when I say that cremini mushrooms have never tasted better than this.


Oh, a little note on cleaning the mushrooms. Unless they are really dirty, don't wash them, just wipe them off with a damp towel. And leave the stems on, but trim any ends that are woody looking.

INGREDIENTS
2 servings
  • 220 g (7.7 oz) cremini mushrooms, cleaned
  • 1/2 tablespoon Hatcho miso paste
  • 2 tablespoon coconut milk
  • 1/2 tablespoon coconut oil, melted
  • 1 teaspoon fresh cilantro, chopped
  • Sweet paprika

INSTRUCTIONS
  • Preheat the oven to 220°C (425°F).
  • Add the miso paste, coconut milk and coconut oil to a bowl, and whisk well to incorporate the miso paste. Pour the mixture over the mushrooms, tossing gently until the mushrooms are well coated.
  • Transfer the mushrooms to a baking sheet lined with parchment paper and roast in the oven for 20-25 minutes, stirring once halfway through.
  • Sprinkle the cilantro and paprika over the roasted mushrooms, and serve while warm.


Non so voi, ma io potrei mangiare funghi tutto il giorno, soprattutto se sono incredibilmente carini come i mini funghi champignon. Mi piacciono così tanto che sarei capace di farci un pasto completo. Ed è esattamente quello che ho fatto con questi funghi arrostiti al miso e cocco.

La sapidità del Hatcho miso si sposa bene con la dolcezza del cocco, e il coriandolo fresco e paprica dolce rendono il piatto un'esperienza straordinaria. E la consistenza? Sono incredibilmente morbidi all'esterno, e un po' croccanti all'interno. Credetemi quando vi dico che i funghi champignon non sono mai stati più buoni di così.

Oh, una piccola nota sulla pulizia dei funghi. A meno che non siamo molto sporchi, non lavateli, puliteli soltanto con un panno umido. E lasciate i gambi, ma eliminate le parti finali se sono legnose.

INGREDIENTI
2 porzioni
  • 220 g funghi champignon cremini, già puliti 
  • 1/2 cucchiaio Hatcho miso
  • 2 cucchiai latte di cocco
  • 1/2 cucchiaio olio di cocco, sciolto
  • 1 cucchiaino coriandolo fresco, tritato
  • Paprica dolce

PROCEDIMENTO
  • Preriscaldate il forno a 220°C.
  • Aggiungete il miso, latte di cocco e olio in cocco in una ciotola, e mescolate bene per incorporare il miso. Versate il composto sopra i funghi, mescolando gentilmente finché i funghi non sono ben coperti.
  • Trasferite i funghi su una teglia foderata con carta da forno e arrostiteli nel forno per 20-25 minuti, mescolando una volta a metà cottura.
  • Cospargete il coriandolo e paprica sopra ai funghi arrostiti, e serviteli caldi.
