Mediterranean Quinoa Salad // Insalata mediterranea di quinoa

It was a very hot day in August last year when I cooked quinoa for the first time. I had found a recipe on YouTube, I didn't have all the ingredients, and at the time I didn't like some of them, so I used what I add. The result was amazing.

Almost an year later, I got the desire to eat that dish. Unfortunately I could not find the YouTube video, so I  went by heart. If the first time it was the beginner's luck, now I am a terrific cook - I'm kidding, of course - and the result could be nothing but good.


This time I managed to balance and enhance all the flavours, which I failed the first time as the chilli almost covered everything else. And the different textures given by a combination of cooked and raw vegetables gives the dish an extra kick - but it was the same the other time.


Unfortunately, despite this dish tasted amazing - even better than last year's - I couldn't get that hot and spicy quinoa out of my head. It really is true what they say, you never forget the first time.

INGREDIENTS
1 serving
  • 60 g (1/4 cup) quinoa
  • 1/2 red bell pepper
  • 1 tomato
  • 8 black olives
  • 1 small red onion
  • 1/4 teaspoon chili powder
  • 1/2 teaspoon dry oregano
  • 1 teaspoon extra virgin olive oil
  • Salt
  • Pepper

INSTRUCTIONS
  • Chop the bell pepper, dice the tomato, mince the onion, and slice the olives.
  • In a pot, heat the olive oil over medium heat. Add half of the minced onion and sautée for 1-2 minutes. Add the tomato dices, half of the bell pepper, half of the olive slices, chili powder, oregano, and salt and cook for 5 minutes.
  • Stir in the quinoa and toast it for 1 minute. Add 180 ml (3/4 cup) of water, bring to a boil, lower the heat, cover, and cook for 15 minutes. Turn off the heat, and let the quinoa rest for 5 minutes, uncovered.
  • Add the remaining onion, olives and bell pepper, some freshly grounded pepper and serve immediately. 


Era una giornata caldissima dell'agosto dello scorso anno quando ho cucinato la quinoa per la prima volta. Avevo trovato una ricetta su YouTube, non avevo tutti gli ingredienti, e all'epoca non mi piacevano alcuni di essi, così ho utilizzato quello che avevo. Il risultato era straordinario.

Quasi un anno più tardi, mi è venuta voglia di mangiare quel piatto. Purtroppo non sono riuscita a trovare il video di YouTube, così ho fatto a memoria. Se la prima volta era la fortuna del principiante, ormai sono una cuoca provetta - sto scherzando, ovviamente - e il risultato non poteva che essere buono.

Questa volta sono riuscita a bilanciare ed esaltare tutti i sapori, cosa che non mi era riuscita la prima volta in quanto il peperoncino quasi copriva tutto il resto. Le consistenze diverse date dalla combinazione di verdure cotte e crude da al piatto una marcia in più - ma era lo stesso l'altra volta.

Sfortunatamente, nonostante questo piatto era buonissimo - e anche più buono di quello dell'anno scorso - non sono riuscita a togliermi quella quinoa calda e piccante dalla testa. È proprio vero quello che dicono, la prima volta non si scorda mai.

INGREDIENTI
1 porzione
  • 60 g quinoa
  • 1/2 peperone rosso
  • 1 pomodoro
  • 8 olive nere
  • 1 cipolla rossa piccola
  • 1/4 cucchiaino peperoncino in polvere
  • 1/2 cucchiaino origano secco
  • 1 cucchiaino olio extravergine di oliva
  • Sale
  • Pepe

PROCEDIMENTO
  • Tagliate il peperone, tagliate il pomodoro a cubetti, tritate la cipolla, e affettate le olive.
  • In una pentola, scaldate l'olio di oliva su fiamma media. Aggiungete la metà della cipolla e cuocete per 1-2 minuti. Aggiungete i cubetti di pomodoro, la metà del peperone, la metà delle olive, peperoncino, origano e sale, e cuocete per 5 minuti.
  • Aggiungete la quinoa e tostatela per 1 minuti. Aggiungete 180 ml di acqua, portate a bollore, abbassate la fiamma, coprite e cuocete per 15 minuti. Spegnete, e lasciate riposare la quinoa, senza coperchio, per 5 minuti.
  • Aggiungete la cipolla, olive e peperone tenuti da parte, un po' di pepe macinato al momento e servite subito.

  4. La cucina per me è un esercizio quotidiano e il tempo e l'esperienza ci aiutano a migliorare, non so che aspetto aveva la prima volta, ma questa volta ti è venuta benissimo!
