Linguine with Zucchini and "Blue Cheese" Sauce // Linguine con salsa di zucchine e "gorgonzola"

 Who said that a linguine dish has to be made with fish in order to be appealing? Or that it does need animal fats to be tasty? I certainly didn't, and these linguine with zucchini and "blue cheese" sauce are the proof that you can eat healthy without giving up on flavour.


This recipe's secret ingredient is Verys Alternative Blue Cheese, a plant based alternative to blue cheese of which you will hear me talk about a lot. The pungent taste of this "cheese" works perfectly with the delicacy of zucchini.

To finish in style, I added to the sauce some chopped and toasted walnuts, which bring to the dish both crunchiness and that richer and deeper flavour resulting from the toasting.


Well, in about twenty minutes, you will have a delicious, healthy dish, and even your meat-lover friends of yours will love.

INSTRUCTIONS
  • Wash the zucchini, then slice both ends off. Cut the zucchini into 1-centimeter (0.4 inches) thick slices.
  • Bring a pot of water to a boil, add the zucchini slices and salt, and cook for 5 minutes. Remove the zucchini slices with a slotted spoon, and blend until smooth.
  • Bring the cooking water of the zucchini to a boil, add the salt and the pasta, and gently prod it around to submerge it under the liquid. Cook for about 9 minutes (always check the package for cooking time).
  • Meanwhile, chop the walnuts, and toast them in a skillet over medium-high heat for 1-2 minutes. Combine the zucchini cream with the alternative blue cheese, and pour into the pan.
  • Drain the pasta, and pour it in the pan with the sauce. Toss to combine and serve.

NOTES
  • To speed up the process, you can bring to a boil two pots of water, one for the pasta, one for the zucchini. That serves only to give the pasta more flavour. 


Chi ha detto che un piatto di linguine per essere appetitevole deve essere a base di pesce? O che per essere buono deve contenere grassi animali? Io non di certo, e queste linguine con salsa di zucchine e "gorgonzola" sono la prova che si può mangiare sano senza rinunciare a piatti gustosi.

L'ingrediente segreto di questa ricetta è Verys Verde di riso, un'alternativa vegetale al gorgonzola della quale mi sentirete molto parlare. Il sapore pungente di questo "formaggio" si sposa alla perfezione con la delicatezza delle zucchine.

Per completare in bellezza, ho aggiunto alla salsa delle noci tritate e tostate, che conferiscono al piatto sia croccantezza che un sapore più ricco e profondo derivante dalla tostatura.

Ebbene, in circa venti minuti, avrete un piatto buonissimo e sano, e che anche i vostri amici amanti della carne ameranno.

PROCEDIMENTO
  • Lavate la zucchina, e tagliate entrambe le estremità. Tagliate la zucchina in fette dello spessore di 1 centimetro. 
  • Portate a bollore una pentola di acqua, aggiungete le fette di zucchina e sale, e cuocete per 5 minuti. Rimuovete le fette di zucchina utilizzando un mestolo forato, e frullate il tutto.
  • Portate l'acqua di cottura della zucchina a bollore, salate, aggiungete la pasta e, delicatamente, spingetela e sommergetela completamente. Cuocete per circa 9 minuti (controllate sempre la confezione per i tempi di cottura).
  • Nel frattempo, tritate le noci, e tostatele in una padella su fiamma medio-alta per 1-2 minuti. 
  • Unite la crema di zucchine con il Verde di riso, e versatelo nella padella.
  • Scolate la pasta, e versatela nella padella con la salsa. Spadellate e servite.

NOTE
  • Per velocizzare la preparazione, potete portate a bollore due pentole di acqua, una per la pasta, una per la zucchina. Quel passaggio serve solo per dare alla pasta più sapore.
