Green Quinoa Salad // Insalata verde di quinoa

I'm pretty sure I already had the chance to tell you how much I love green. Just in case I hadn't, here's a green quinoa salad.

There isn't much of a work behind this recipe. It is one of those dishes that you eventually get when you put together the stuff you have in the fridge.


Well, this time - lucky me - my fridge happened to be filled with mostly green stuff, so I decided to make this salad that is both healthy and a great way to fight the heat.

It is refreshing, it has a lot of flavour and don't get me started on the textures. Soft quinoa, crunchy cucumber, soft green beans, and a combination of both with the lettuce. And the lime and mint make it quite refreshing.

So without further ado, I leave you to the recipe. Enjoy!

INGREDIENTS
1 serving
  • 60 g (1/4 cup) quinoa
  • 1 dozen green beans
  • 1 small cucumber
  • 65 g (7/8 cup) lettuce, chopped
  • 1 lime
  • 3 mint leaves
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Himalayan salt

INSTRUCTIONS
  • In a pot, add the quinoa and toast it for 1-2 minutes. Add 120 ml (1/2 cup) water and bring to a boil. Reduce to a simmer and cook, covered, for 10-15 minutes. Remove from the heat, and let it sit, covered, for 10 minutes. Fluff with a fork.
  • Bring to a boil a pot of water. Add the green beans and cook for about 6 minutes. Drain them and cut into pieces. Heat the olive oil in a pan over medium heat, add the cooked beans, the cumin and Himalayan salt and sautée for a minute. 
  • Cut the cucumber into quarters, then slice it. Grate the lime zest and squeeze the lime. Chop the mint leaves.
  • In a bowl, add the quinoa, cucumber, green beans, lime juice and zest, mint leaves, salt to taste and mix well.
  • In a plate, add the lettuce and top with everything else.

NOTES
  • You can make this salad the day before, and store it in the fridge. In this case, add the lettuce before serving.


Sono sicura che ho già avuto l'occasione di dirvi quanto amo il verde. Nel caso in cui non l'abbia fatto, ecco un'insalta verde di quinoa.

Non c'è molto lavoro dietro questa ricetta. È uno di quei piatti che vengono fuori quando metti insieme la roba che hai in frigo.

Ebbene, questa volta - e che fortuna - il mio frigo era pieno perlopiù di roba verde, così ho deciso di fare quest'insalata che è sia sana e un ottimo modo per combattere il caldo.

È rinfrescante, ha molto sapore e non fatemi neanche iniziare sulle consistenze. Soffice quinoa, cetriolo croccante, fagiolini morbidi, e una combinazione di entrambi con la lattuga. E il lime e meta rendono il piatto alquanto rinfrescante.

INGREDIENTI
1 porzione
  • 60 g quinoa
  • 1 dozzina fagiolini
  • 1 piccolo cetriolo
  • 65 g lattuga, spezzettata
  • 1 lime
  • 3 foglie di menta
  • 1 cucchiaino di olio extravergine di oliva
  • 1/2 cucchiaino di cumino in polvere
  • Sale dell'Himalaya

PROCEDIMENTO
  • In una pentola, aggiungete la quinoa e tostatela per 1-2 minuti. Aggiungete 120 ml di acqua e portate a bollore. Riducete ad un leggero bollore e cuocete, con coperchio, per 10-15 minuti. Togliete dal fuoco, e fate riposare, coperta, per 10 minuti. Sgranate con una forchetta.
  • Portate a bollore una pentola di acqua. Aggiungete i fagiolini e cuoceteli per 6 minuti circa. Scolateli e tagliateli a pezzetti. Scaldate l'olio in una padella su fiamma media, aggiungete i fagiolini, il cumino e il sale dell'Himalaya e spadellate per un minuto.
  • Tagliate il cetriolo in quarti, quindi affettateo. Grattugiate la scorza del lime e spremete il succo di quest'ultimo. Tritate le foglie di menta.
  • In una ciotola, aggiungete la quinoa, cetriolo, fagiolini, succo e scorza del lime, foglie di menta, sale a piacere e mescolate bene.
  • In un piatto, aggiungete la lattuga e completate con il resto.

NOTE
  • Potete preparare questa insalata il giorno prima, e conservarla in frigo. In questo caso aggiungete la lattuga prima di servire.
