Creamy Tomato Soup // Vellutata di pomodoro

Yes, I'm still making soups. Whether smoking hot or freezing cold outside, I do always enjoy a bowl of warm soup. What can I tell you, I love them. They are one of the easiest things to cook, just think about a few flavours that taste good together, throw them in a pot and stir.

When it comes to making creamy soups, however, there's the tendency to transform an healthy dish into something loaded with animal fats, fats that will end up on your waistline and arteries. The alternative could be just using vegetables and stock, but what if you want to give the soup that extra creaminess?


This creamy tomato soup knows the answer. It is blue cheese. Well, it's not actually blue cheese but its vegan alternative, still you get the creaminess you're looking for. I used Verys Alternative Blue Cheese, their blue cheese alternative, whose flavour I've fallen in love with. It isn't as strong as the actual blue cheese, instead it is more delicate but still packed with flavour.

Now that I've revealed the first secret to this recipe, I guess I have to unveil the other one too. I made this soup in 5 minutes only. How is it possible? I used tomato sauce instead of whole raw tomatoes. Now, you want to make sure you have a good quality sauce or the soup may not taste as good as it should.

INSTRUCTIONS
  • Pour the tomato sauce and stock into a pot and bring to a simmer.
  • Stir in Verys Alternative Blue Cheese, and continue cooking until the "cheese" has fully melted.
  • Serve hot.


Sì, ancora preparo le zuppe. Che sia caldissimo o che si congeli, mi piace sempre gustare un piatto di zuppa calda. Cosa posso dirvi, le amo. Sono una delle cose più facili da cucinare, basta pensare ad un paio di sapori che si sposano bene insieme, metterli in una padella e mescolare.

Quando si tratta di fare zuppe cremose, però, c'è la tendenza a trasformare un piatto salutare in qualcosa carico di grassi animali, grassi che finiranno sul vostro giro vita e nelle vostre arterie. L'alternativa potrebbe essere utilizzare soltanto verdure e brodo, ma se invece volete dare alla zuppa quella cremosità extra?

Questa vellutata di pomodoro conosce la risposta. È il gorgonzola. Beh, non è proprio gorgonzola, ma la sua alternativa vegana, comunque ancora otterrete la cremosità che cercate. Io ho utilizzato il Verde di riso Verys, la loro alternativa al gorgonzola, in quanto mi sono innamorata del sapore. Non è forte come quello del vero gorgonzola, ma è più delicato ma ancora ricco di sapore.

Ora che vi ho rivelato l'ingrediente segreto di questa ricetta, credo di doverne svelare anche un altro. Ho fatto questa vellutata in soli 5 minuti. Come è possibile? Ho utilizzato la passata di pomodoro invece dei pomodori crudi. È però importante assicurarsi di avere una passata di buona qualità o la vellutata potrebbe non essere buona come dovrebbe.

PROCEDIMENTO
  • Versate la passata di pomodoro e il brodo in una pentola e portate ad un leggero bollore.
  • Aggiungete il verde di riso, e continuate a mescolate finché il "formaggio" non sarà sciolto completamente.
  • Servite calda.
