Blueberry Pie

My mother is the family baker, so whenever my family is invited over for lunch or dinner, we always bring a delicious dessert over. Last Thursday we were invited for a barbecue, and I decided to do something completely crazy, make my first pie ever.

Well, the making of the pie wasn't easy. If there is something you should know about me is that I get discouraged quite easily. I spent a lot of time to make the crust from scratch, and I was sure it was going to taste awful. I was exhausted because I couldn't find the right pie dish. They were all too big or too small. And I struggled a lot to decorate the pie.


After all that time I spent baking, I didn't even want to look at the finished pie. The reason? I thought it looks tremendously ugly. It really didn't matter that my mom - who I have to thank immensely for providing me with amazing psychological support - or my dad told me it looked good, it just didn't convince me. I eventually took some photos, and eventually realized this pie didn't look that bad after all.


And it was delicious too! Everybody loved it, and everybody complimented me. The crust that I was so worried about turned out to be so good that this one lady asked me if I could make her an elderberry pie with her elderberry jam.

So yeah, it was a success. And it almost didn't make it to the blog.

INGREDIENTS
  • 250 g (1 + 2/3 cup) whole wheat flour
  • 70 ml (1/4 cup + 2 teaspoons) corn oil
  • 50 g (2 + 1/2 tablespoons) maple syrup
  • 5 g (1 + 1/2 teaspoon) baking powder
  • 250 g (3/4 cup) blueberry jam

INSTRUCTIONS
  • In a big bowl, whisk together the corn oil and maple syrup. In another bowl mix the flour and baking powder, then pour them into the oil mixture. Mix well until crumbles starts to form. Add enough water, a little at time, to create a smooth dough. Place it in a bowl, cover with a cloth and let it stand at room temperature for one hour.
  • Preheat the oven to 180°C (350°F).
  • Place the dough on a surface (you won't need extra flour because of the oil) and begin to roll it with a rolling pin, starting at the center and working your way out.
  • Place the dough in a 20 centimeters (7.8 inches) diameter pie dish lined with parchment paper and gently press it evenly into the dish.
  • Prick the bottom of the pie all over with a fork, then fill the crust with the jam. Cut the extra pastry and use it to decorate the top of the pie if desired.
  • Bake the pie for 30-35 minutes. Remove and allow to cool down on a rack.


Mia madre è la pasticcera di casa, così ogni volta che la mia famiglia è invitata a pranzo o cena, noi portiamo sempre un delizioso dolce. Lo scorso giovedì siamo stati invitati per un barbecue, e ho deciso di fare qualcosa di completamente folle, fare la mia prima crostata.

Ebbene, la realizzazione della crostata non è stata facile. Se c'è qualcosa che dovreste sapere su di me è che mi scoraggio molto facilmente. Ho passato un sacco di tempo per fare la crosta da zero, ed ero sicura che sarebbe stata terribile. Ero esausta perché non riuscivo a trovare la teglia giusta. Erano tutte troppo grandi o troppo piccole. E ho fatto molta fatica per decorare la crostata.

Dopo tutto quel tempo, non volevo nemmeno guardare la torta finita. Il motivo? Pensavo che fosse tremendamente brutta. Non aveva importanza che mia madre - che devo ringraziare immensamente per tutto il supporto psicologico fornitomi - o mio padre dicevano che aveva un bell'aspetto, a me non convinceva. Alla fine ho fatto alcune foto, e alla fine mi sono resa conto che questa crostata non aveva poi un aspetto così orribile.

Ed era buonissima pure! È piaciuta a tutti, e tutti mi hanno fatto i complimenti. La base che mi preoccupava tanto era buonissima, così buona che una signora mi ha chiesto se potevo farle una crostata con la sua marmellata di sambuco.

Quindi sì, è stato un successo. E per poco non finiva neanche sul blog.

INGREDIENTI
  • 250 g farina integrale
  • 70 ml olio di mais
  • 50 g sciroppo d'acero
  • 5 g lievito in polvere
  • 250 g marmellata di mirtilli

PROCEDIMENTO
  • In una ciotola capiente, emulsionate l'olio di mais e sciroppo d'acero con una frusta. In un'altra ciotola mescolate la farina e lievito, quindi versatevi nel composto di olio. Mescolate bene finché non si creeranno delle briciole. Aggiungete abbastanza acqua, poca alla volta, per creare un impasto liscio. Mettete l'impasto in una ciotola, copritela con un canovaccio e fate riposare a temperatura ambiente per un'ora.
  • Pre-riscaldate il forno a 180°C.
  • Mettete l'impasto su una spianatoia (non sarà necessaria altra farina per via dell'olio) e iniziate a spianarlo con un mattarello, partendo dal centro per finire verso l'esterno.
  • Mettete l'impasto in una teglia di 20 centimetri di diametro foderata con carta da forno e premetelo delicatamente per farlo aderire.
  • Bucherellate il fondo con i rebbi di una forchetta, quindi riempite la crostata con la marmellata. Tagliate la pasta in eccesso e, se volete, utilizzatela per decorare la superficie della torta. 
  • Cuocete per 30-35 minuti. Sfornate e lasciate raffreddare su una griglia.
