Broccoli and Goat Cheese Buckwheat Tart // Torta salata di grano saraceno con broccoli e caprino

 (Italiano sotto) I finally have some good news people! No, I'm not going to stop doing what I've been doing for the past three/four months, posting a recipe and disappearing for an entire month. Yeah, I know it isn't cool, but remember my "being lazy and not being so motivated to keep doing this" talk? Well, it's still the same. But I feel more like cooking more elaborate dishes recently. It's probably because Spring is coming.

Anyway, my big news is that --while I still haven't found a job (I almost got one though) nor got my period back (it's two exact years today)-- I got my blood test results on Monday and my blood hasn't looked this good in almost two years! Not to mention that I've never had so many platelets. I guess gluten was the problem since it's the only thing I've cut out of my diet.


And life without gluten is so much harder! I don't miss gluten itself, I miss cooking with it. How easy it is to basically do whatever you want in the kitchen with it. I have to say though that coming up with a gluten-free crust wasn't that hard and this buckwheat one turned out pretty good.

I had the idea for this tart months ago, when my mother made a cheese-stuffed focaccia but accidentally bought low-fat stracchino instead of regular and the focaccia was tasteless. I cooked some broccoli that night and I had some goat cheese in the fridge so I removed the "lid" and spread goat cheese and broccoli on top of that flavourless cheese. It was delicious.


Yesterday, I finally decided to make something similar, only with a buckwheat crust and, frankly, buckwheat flour smells and tastes so good, I liked this version way more than the gluten version.

INGREDIENTS
For the crust
  • 225 g (1 1/2 cup) whole buckwheat flour
  • 1 organic egg
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 60 ml (1/4 cup) water

For the filling
  • 225 g (1 1/3 cup) chopped broccoli - one medium head
  • 150 g (5.3 oz) soft goat cheese
  • 1 small onion, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • Grana Padano or Parmigiano
  • Salt
  • Pepper

INSTRUCTIONS
For the crust
  • In a large bowl, mix the flour with salt. 
  • Stir in the beaten egg and olive oil and start mixing with a fork until crumbles form. 
  • At this point, add the water, one tablespoon at a time, until you can form a ball. 
  • Cover and let it rest in the fridge for about 30 minutes.

For the filling
  • Heat the olive oil in a pan over medium heat, add the onion and cook, stirring occasionally, for 2-3 minutes, until it starts to golden. 
  • Add the broccoli, season with salt and cook for 5 minutes, adding some water if needed. Adjust salt and season with pepper. 

  • Preheat the oven to 200°C (400°F). 
  • Move the dough in a 22cm (8.6 inches) oiled tart tin and spread it out evenly on the bottom and the sides. 
  • Prick the bottom of the tart base with a fork then bake it for 10 minutes.
  • Spead the goat cheese on the crust, top with the broccoli, sprinkle with some grated Grana Padano or Parmigiano, and bake for 20 minutes.
  • Serve hot, warm or chilled. 


Ho finalmente delle buone notizie gente! No, non smetterò di fare quello che ho fatto per gli ultimi tre/quattro mesi, cioè postare una ricetta e scomparire per un mese intero. Sì lo sono che non va bene, ma vi ricordate il mio discorso sull'essere pigra e non aver molta motivazione per continaure a fare questo? Beh, è ancora lo stesso. Ma ultimamente ho più voglia di cucinare piatti più elaborati. Sarà la primavera che sta arrivando.

Comunque sia, la mia grande notizia è che --anche se non ho ancora trovato lavoro (ci sono andata molto vicina però) e il ciclo ancora non si è visto (sono due anni esatti oggi)-- mi sono arrivati i risulatati delle analisi del sangue lunedì e il mio sangue non aveva un aspetto così bello in quasi due anni! Per non parlare del fatto che non ho mai avuto così tante piastrine. A quanto pare era proprio il glutine il problema dato che è l'unica cosa che ho eliminato dalla mia dieta.

E la vita senza glutine è così difficile! Non mi manca il glutine in se, mi manca cucinarci. La facilità con cui si può fare praticamente qualsiasi cosa in cucina con esso. Devo però dire che ideare una base per torta salata senza glutine non è stato molto difficile e questa di grano saraceno è venuta molto bene.

Mi è venuta l'idea per questa torta salata mesi fa, quando mia madre aveva fatto una focaccia al formaggio ma aveva per sbaglio comprato lo stracchino senza grassi invece di quello normale e la focaccia non sapeva di niente. Avevo cucinato dei broccoli quella sera e avevo del formaggio di capra in frigo così avevo rimosso il "coperchio" e spalmato il formaggio di capra e broccoli sopra a quel formaggio senza sapore. Era deliziosa.

Ieri, ho finalmente deciso di fare qualcosa di simile, però con una base di grano saraceno e, francamente, la farina di grano saraceno ha un odore e un sapore così buono che questa versione mi è piaciuta molto di più di quella con il glutine.

INGREDIENTI
Per la base
  • 225 g di farina di grano saraceno integrale
  • 1 uovo biologico
  • 2 cucchiai di olio extravergine di oliva
  • 1/2 cucchiaino di sale
  • 60 ml di acqua

Per il ripieno
  • 225 g di broccoli a pezzi - un broccolo medio
  • 150 g di caprino morbido
  • 1 cipolla piccola, affettata finemente 
  • 1 cucchiaio di olio extravergine di oliva
  • Grana Padano o Parmigiano
  • Sale
  • Pepe

PROCEDIMENTO
Per la base
  • In una grande ciotola, mescolate la farina con il sale. 
  • Unitevi l'uovo sbattuto e l'olio di oliva e iniziate a mescolare finché si formeranno delle briciole. 
  • A questo punto, unite l'acqua, un cucchiaio alla volta, finché riuscirete a formare una palla. 
  • Coprite e lasciate riposare in frigo per circa 30 minuti. 

Per il ripieno
  • Scaldate l'olio di oliva in una padella su fiamma media, aggiungete la cipolla e cuocete, mescolando di tanto in tanto, per 2-3 minuti, finché diventà dorata.
  • Aggiungete i broccoli, salate e cuocete per 5 minuti, aggiungendo un po' di acqua se necessaria. Aggiustate di sale e pepate.

  • Preriscaldate il forno a 200°C. 
  • Trasferite l'impasto in una tortiera unta da 22cm di diametro e distribuitelo in modo uniforme sul fondo e ai lati. 
  • Punzecchiate il fondo della torta con una forchetta e cuocete in forno per 10 minuti. 
  • Spalmate il formaggio di capra sulla base, completate con i broccoli, aggiungete un po' di Grana Padano o Parmigiano grattugiato, e cuocete per 20 minuti.
  • Servite calda, tiepida o fredda.

  2. Mi fa molto piacere che tu abbia trovato la soluzione a parte dei tuoi problemini di salute ^_^ Vedrai che ti divertirai a sperimentare ricette senza glutine, potrebbe essere uno stimolo per cucinare anche un po' di più e condividere con noi ^_^
    Intanto questa torta salata è da libidine e poi adoro il sapore del grano saraceno..non mi resta che prendere appunti e replicare :-)
