Mushroom Brown Rice Risotto // Risotto integrale con funghi

There has to be something wrong with me because apparently I am not able to cook brown rice. No matter how hard I try, it never cooks properly.

This is my third attempt, and when I realized I once again screwed up the absorption method, I decided to go with the risotto method, impossible to fuck that up, right? This is how a dish that was supposed to be simple brown rice and mushrooms became mushroom brown rice risotto.


I did struggle a little bit, but the flavours are there - adding the Worcestershire sauce was a last second decision as I was looking for that extra flavour, and it was a brilliant idea. And I'm surprised by how creamy it ended up considering there is no butter or cheese.


The cooking time is a little long, but it's totally worth it because brown rice is really great for our health. It has four times more fiber than white rice, three times the magnesium and double the iron. So what are you waiting for?

INGREDIENTS
1 serving
  • 75 g (1/3 cup) brown Arborio rice
  • 480 ml (2 cup) vegetable broth
  • 5 cremini mushrooms, sliced
  • 1/2 red onion, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon extra virgin olive oil
  • 1/4 teaspoon dry oregano
  • Fresh chives, chopped
  • Salt
  • Pepper

INSTRUCTIONS
  • Bring vegetable broth to a boil, cover and keep it at a near-simmer on low heat.
  • Heat the olive oil in a pot over medium heat. Add the onion and cook, stirring frequently, until translucent, about 2 minutes.
  • Stir in the mushrooms, Worcestershire sauce and oregano and cook, stirring occasionally, for 5 minutes; season with salt and pepper.
  • Add the rice and toast it for 1-2 minutes. Pour 1 cup of the hot broth, bring to a boil, adjust the heat to maintain a simmer, and cook, stirring constantly, until liquid is almost absorbed. Continue cooking by adding a ladle of broth when the previous one has been absorbed. It should take between 45-50 minutes.
  • Serve immediately, garnished with the chives, if desired.


Ci deve essere qualcosa che non va con me perché a quanto pare non sono capace di cucinare il riso integrale. Non importa quanto ci provi, non si cuoce mai bene.

Questo è il mio terzo tentativo, e quando mi sono resa conto ho fallito con il metodo ad assorbimento, ho deciso di fare un risotto, impossibile da rovinare, non è forse vero? Questo è come un piatto che doveva essere semplice riso integrale con funghi è diventato un risotto di riso integrale con funghi.

Ho avuto qualche difficoltà, ma i sapori ci sono - l'aggiunta della salsa Worcestershire è stata una scelta dell'ultimo secondo in quando ero alla ricerca di quel tocco in più, ed è stata un'idea brillante. E sono sorpresa da quando cremoso è venuto considerando che non ho utilizzato né burro né formaggio.

Il tempo di cottura è un po' lungo, ma ne vale la pena perché il riso integrale è veramente buono per la nostra salute. Ha quattro volte di fibra del riso bianco, il triplo di magnesio e il doppio di ferro. Quindi cosa state aspettando?

INGREDIENTI
1 porzione
  • 75 g riso Arborio integrale
  • 480 ml brodo vegetale
  • 5 funghi champignon, affettati
  • 1/2 cipolla rossa, tritata
  • 1 cucchiaino salsa Worcestershire
  • 1 cucchiaino olio extravergine di oliva
  • 1/4 cucchiaino origano secco
  • Erba cipollina fresca
  • Sale
  • Pepe

PROCEDIMENTO
  • Portate a bollore il brodo, coprite e tenere ad un quasi bollore su fiamma bassa.
  • Scaldate l'olio di oliva in una pentola a fuoco medio. Aggiungete la cipolla e cuocete, mescolando spesso, finché non sarà trasparente, circa 2 minuti.
  • Aggiungete i funghi, salsa Worcestershire e origano e cuocete, mescolando occasionalmente, per 5 minuti; salate e pepate.
  • Aggiungete il riso e tostatelo per 1-2 minuti. Versate 240 ml di brodo caldo, portate a bollore, aggiustate la fiamma per mantenere un bollore leggero, e cuocete, mescolando spesso, finché il liquido non sarà assorbito. Continuate la cottura aggiungendo un mestolo di brodo quando il precedente sarà stato assorbito. Ci dovrebbero volere tra i 45-50 minuti.
  • Servite subito, decorato, a piacere, con l'erba cipollina.

    hai fatto bene a insistere!
    Il riso integrale è assai difficoltoso, anche le cuoche della "mia" scuola dell'infanzia erano quasi disperate, ma ne vale la pena e il tuo ha un aspetto bellissimo, non può che essere buono!
