Cucumber Avocado Gazpacho // Gazpacho al cetriolo e avocado

I can't believe it's August already. Yes, I just realized it, probably it's because of the heat. I guess it has done some pretty serious damage to me. Anyway, to cool down there's nothing better than something cold, am I right? So here I am with my first gazpacho.

Well, technically this is not a gazpacho because it doesn't have a tomato base and there is no bread - and according to Wikipedia those ingredients are usually in gazpachos -, but does anyone really care? I mean, afterall it's a soup made of veggies and served cold.


This cucumber avocado gazpacho is super refreshing, super nutrient and perfect for summer time because of all of the cucumber's benefits. It keeps you hydrated, helps you fighting the heat, detoxifies the body, stabilizes blood pressure and it has a lot of minerals great for the skin.


The avocado of course isn't just watching. It sure adds creaminess, but it also provides a lot of nutrients like Vitamin C, K and potassium, fibers, and those healthy fats of it help you absorb nutrients from plant foods, like those of the previously mentioned cucumber.

The mint, well, it's refreshing, and the almonds add the needed crunchiness.


INGREDIENTS
1 serving
  • 1 cucumber
  • 1/2 ripe avocado
  • 120 ml (1/2 cup) water
  • 2 mint leaves
  • 5 almonds
  • 1 garlic glove
  • 1/2 lemon juice
  • Salt
  • Pepper

INSTRUCTIONS
  • Cut the cucumber in a half, remove the seeds, then slice it. Mince the garlic clove. Roughly chop the mint leaves. Roughly chop the almonds.
  • In a blender, combine the cucumber slices, avocado, garlic, mint, lemon juice, water, salt and pepper to taste, and blend until smooth. Chill in an airtight container in the fridge until ready to serve.
  • Garnish with the chopped almonds and serve.


Non posso credere che siamo già ad agosto. Sì, me ne sono resa conto soltanto ora, probabilmente è per il caldo. Immagino mi abbia fatto proprio male. Ad ogni modo, per rinfrescarsi non c'è niente di meglio di qualcosa di freddo, non ho forse ragione? Quindi eccomi con il mio primo gazpacho.

Beh, tecnicamente non è un gazpacho perché non ha una base di pomodoro e non c'è pane - e secondo Wikipedia questi ingredienti solitamente sono nel gazpacho -, ma a qualcuno veramente interessa? Voglio dire, dopo tutto è una zuppa fatta di verdure e servita fredda.

Questo gazpacho al cetriolo e avocado è super rinfrescante, super nutriente e perfetto per l'estate per via di tutti i benefici del cetriolo. Vi mantiene idratati, vi aiuta a combattere il caldo, disintossica il corpo, stabilizza la pressione sanguinea e ha tanti minerali ottimi per la pelle.

L'avocado ovviamente non sta solo a guardare. Certamente aggiunge cremosità, ma apporta anche molto nutrienti come vitamina C, K e potassio, fibre, e il suo grassi "buoni" aiutano ad assorbire i nutrienti degli alimenti vegetali, come quelli del sopracitato cetriolo.

La menta, beh, è rinfrescante, e le mandorle aggiungono la croccantezza necessaria.

INGREDIENTI
1 porzione
  • 1 cetriolo
  • 1/2 avocado maturo
  • 120 ml acqua
  • 2 foglie menta
  • 5 mandorle
  • 1 spiccho d'aglio
  • 1/2 limone, succo
  • Sale
  • Pepe

PREPARAZIONE
  • Tagliate il cetriolo a metà, rimuovete i semi, quindi affettatelo. Tritate lo spicchio d'aglio. Tritate grossolanamente le foglie di menta. Tritate grossolanamente le mandorle.
  • In un frullatore, unite le fette di cetriolo, avocado, aglio, menta, succo di limone, acqua, sale e pepe a piacere, e frullate finché il composto non sarà omogeneo. Fate raffreddare in un contenitore ermetico in frigo fino al momento di servire.
  • Guarnite con le mandorle tritate e servite.

  2. I wish I could say the same about August weather over here...sadly, it has been raining and raining...the average temperature is below 20C...the soup looks fabulous!
