Buckwheat and "Blue Cheese" Pancakes with Fig Sauce // Pancakes di grano saraceno e "gorgonzola" con salsa di fichi

I'm used to having sweet breakfasts, but sometimes I do have a hard time deciding whether I want a sweet or savory dish. These pancakes saved me the worry as they combine both sweet and salty beautifully.



For the pancakes, I used Verys Alternative Blue Cheese, a vegan blue cheese whose creaminess and spreadability is more than good to mix into the pancakes batter. Also, since it has agar-agar and other thickening agents, it is a great substitute for eggs, and will prevent your pancakes from breaking.

And then there is my favourite flour, buckwheat flour that bring its nutty flavour and gives the pancakes both an unique flavour the airy texture I love.


And now comes the sweet, a delicious fig sauce. Fig and cheese is a classic pairing, just like pear and cheese which I wanted to use in the first place. But then I put my hands on some tasty figs, and I couldn't resist. I usually try not to add additional sugars, but this time I kind of had to so that the sauce would have made a bigger contrast with the pancakes. But don't worry, I kept it healthy, I used maple syrup.


Every single bite of these pancakes felt like heaven: the buckwheat flour, the fig sauce and the Alternative Blue Cheese did really make a great job! (If you are interested, you can find out more about Verys and their products on their website or on their Facebook page)

INGREDIENTS
1 serving
For the pancakes
  • 50 g (scart 1/4 cup) buckwheat flour
  • 60 ml (1/4 cup) plant-based milk (I used rice milk)
  • 50 g (1.75 oz) Verys Alternative Blue Cheese
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the sauce
  • 1 fig
  • 120 ml (1/2 cup) water
  • 1/2 teaspoon maple syrup

INSTRUCTIONS
For the pancakes
  • In a bowl, whisk together the flour, baking powder and salt. Pour in the milk and stir well. Add in the Alternative Blue Cheese and stir until it has spread into the batter evenly.
  • Heat a non-sticking pan over medium heat. Pour a tablespoon of batter for each pancake and cook for 1-2 minutes, until bubble starts to form and the bottom is golden. Flip and continue to cook for 1-2 minutes.

For the sauce
  • Cut the fig into pieces, put them in a pot with the water and maple syrup, and bring to a boil. Simmer for 10-15 minutes.

  • Serve the pancakes warm with the fig sauce.


Sono abituata ad una colazione dolce, ma a volte ho difficoltà a decidere se voglio qualcosa di dolce o salato. Questi pancakes mi hanno evitato il dilemma in quanto combinano benissimo dolce e salato.

Per questi pancakes ho utilizzato Verys Verde di riso, un'alternativa vegana al gorgonzola la cui cremosità e spalmabilità lo rende più che buono per aggiungerlo alla pastella dei pancakes. Inoltre, dato che contiene l'agar-agar e altri agenti addensanti, è un ottimo sostituto per le uova ed eviterà che i pancakes si rompano.

E poi c'è la mia farina preferita, la farina di grano saraceno con il suo ricco sapore e conferisce ai pancakes sia il suo unico sapore che quella consistenza areata che adoro.

E ora arriva il dolce, una deliziosa salsa di fichi. Fichi e formaggio è un abbinamento classico, come pere e formaggio che è quello che volevo fare in un primo momento. Ma poi ho messo le mani su dei deliziosi fichi e non ho saputo resistere. Solitamente cerco di non aggiungere zuccheri, ma questa volta ho dovuto in modo che la salsa creasse un contrasto maggiore con i pancakes. Ma non vi preoccupate, è ancora salutare, ho utilizzato lo sciroppo d'acero.

Ogni singolo morso di questi pancakes era paradisiaco: la farina di grano saraceno, la salsa di fichi e il Verde di riso hanno fatto proprio un buon lavoro! (Se siete interessati, potete scoprire di più su Verys e sui loro prodotti sul loro sito o sulla loro pagina Facebook)

INGREDIENTI
1 porzione
Per i pancakes
  • 50 g farina di grano saraceno
  • 60 ml latte vegetale (io ho usato latte di riso)
  • 50 g Verys Verde di riso
  • 1 cucchiaino lievito in polvere
  • 1/2 cucchiaino sale

Per la salsa
  • 1 fico
  • 120 ml acqua
  • 1/2 cucchiaino sciroppo d'acero

PROCEDIMENTO
Per i pancakes
  • In una ciotola, mescolate insieme la farina, lievito e sale. Versate il latte e mescolate bene. Aggiungete il Verde di riso e mescolato finché non è distribuito bene nella pastella.
  • Scaldate una padella antiaderente su fiamma media. Versate un cucchiaio di pastella per ogni pancake e cuocete per 1-2 minuti, finché si formano delle bolle e fondo è dorato. Girate e continuate la cottura per 1-2 minuti. 

Per la salsa
  • Tagliate il fico a pezzetti, metteteli in un pentolino con l'acqua e lo sciroppo d'acero, e portate a bollore. Sobbollite per 10-15 minuti. 

  • Servite i pancakes caldi con la salsa.
