Pea Soup // Vellutata di piselli

Wednesday, May 04, 2016

Peas, those little green balls I used to hate growing up. I recently gave them another try, you know just in case, and guess what, they are incredibly delicious, and this green soup is a great way to enjoy them.

As I promised on day one, today I'm sharing a recipe that is both simple and that doesn't take a lot of time - it took me about 15 minutes total, and I can be very slow in the kitchen. So without further ado, here's my easy peasy pea soup.

INGREDIENTS
1 serving
  • 180 g (1 ½ cup) frozen peas
  • 240 ml (1 cup) vegetable broth
  • 3 mint leaves

INSTRUCTIONS
  • In a pot, add the peas and pour in the broth. Bring to a boil and cook for 5-10 minutes (it depends on the size of your peas).
  • Add the mint leaves, and blend until the mixture is creamy.
  • Garnish with pea shoots, fresh cut chives or pumpkin seeds, and serve.
