Whole Wheat Coffee Muffins // Muffins integrali al caffè

Wednesday, June 29, 2016

I am not much of a baker because there are rules that have to be followed in order to get good results and because it is extremely hard to make a dessert that both tastes good and is healthy. But since I had some kefir left, I attempted at making muffins from scratch for the first time and I gotta say I'm pretty happy with the result.

Zucchini have many uses, and among them all, spiralizing them to make noodles is definitely the most cool of the ways. They even have a cool name, zoodles.

Spicy Seared Tofu // Tofu saltato piccante

Wednesday, June 22, 2016

It all started with me wanting to make scrambled tofu, realizing the new brand I bought was too soft for that, and eventually realizing it actually wasn't that soft, but at that point I already had given up on the idea of having scrambled tofu.

Sure, you have to keep it stocked in your fridge, but you will be rewarded with this delicious and quick ravioli dish with a black tea and raisins sauce.

Grilled Chicken and Apple Salad // Insalata di pollo e mela grigliati

Wednesday, June 15, 2016

Have you ever had grilled Granny Smith apples? If you haven't, I'm telling you right now that you will love them! They taste absolutely amazing! I don't know what it is, if it's the heat that brings out of them an incredible sweetness, or the fact that I used lime juice, but these apples really are an explosion of flavour. They are so good, I don't even know how to describe it!

It was love at first sight, and we made... pizza! A gluten-free, vegan pizza that everyone can enjoy.

The basic recipe is so simple, it is very easy to make your own version, adjusting herbs and spices to your liking.

Greek Zucchini Gratin // Gratin greco di zucchine

Wednesday, June 08, 2016

Greek... gratin? I know, it doesn't make a lot of sense, gratins originated in France, are part of their cuisine and don't have anything to do with Greece. But what if instead of using melty cheese like a normal person would do, I use greek yogurt and feta? Well, I guess that makes a hell of a difference, doesn't it?

Spicy Soya Chunks // Bocconcini di soia speziati

Monday, June 06, 2016

Some time ago I made the terrible mistake of buying soya chunks. Why terrible you ask? Because I genuinely had no idea how to use them. I knew they are used to replace meat, but I'm not much of a meat cooker, or eater, so still unknown territory to me.

Vegan Coffee-Flavoured Chocolate Mousse // Mousse vegana al cioccolato all'aroma di caffè

Chocolate Mousse is a typical unhealthy dessert with heavy cream and a lot of sugar, so I accepted the challenge to make it healthy, completely guilt-free and quite nutritious as well.
