Baked Banana Rice Paper Rolls // Involtini di carta di riso alla banana al forno

(Italiano sotto) I struggled a lot with anxiety and depression in 2017. I thought I managed to leave all that behind me but apparently, I didn't. I feel stuck, like I'm going nowhere. I am 24 and I know many of you will say that I'm still young, but am I really that young? I still haven't been able to find a job, I don't have a relationship which doesn't bother me that much but some people never fail to point that out, and the future is starting to terrifying me. A lot.

To that, add the fact that nothing seems to go right lately. After that terrible fight with my mother --we eventually made up but I still spent half of my birthday and the day after crying--, more health issues have arisen. As if not having a period in two years and becoming gluten intolerant weren't enough.

On Sunday 8 my left palm started hurting a little. I didn't give it much thought at first but then it got worse and, on Monday, it started tingling too and my right hand joined the "party". I thought it was the Fibtib (I bought it on that weekend) so I took it off. The pain didn't get any better and I started having shivers as well. On Thursday, my left arm started tingling as well, and then my legs. The pain was so intense I basically cried all day. So I went to the doctor and turns out I have cervical and inflamed neck muscles. It's getting a little better now, but my hands still hurt occasionally.


Then on Sunday, my computer started acting up and it's been driving me insane for the past three days. And this morning, while I was shooting these rolls, I burnt the beef stew I was supposed to have tomorrow for lunch. Luckily, I was able to save most of it. Not to mention that I had to use two bananas because half of both was bruised everywhere.

And now the good news, the blog turned two. Actually, it's turning two today and since it's called Inglourious Bananas I decided to celebrate with a banana recipe, these banana rolls. They are gluten-free (and vegan), pretty easy to make and just as quick to make. They don't look like a thousand bucks because when the banana cooked became very soft, but they taste amazing!

INGREDIENTS
2 servings
  • 1 banana
  • 2 rice paper foils
  • 1/2 teaspoon maple syrup
  • Cinnamon powder
  • Butter or coconut oil, melted

INSTRUCTIONS
  • Preheat the oven to 230°C (450°F).
  • Cut the banana in half, then coat it with the maple syrup.
  • Fill a large bowl with warm water. Place the rice papers into the water, one sheet at a time, and soak until soft, about 10 seconds.
  • Place the rice paper on a smooth and flat surface, sprinkle some cinnamon and place half of the banana on one end. Fold the bottom, then the sides and at last the top. Repeat for the other roll.
  • Brush the rolls on both sides either with some melted butter or coconut oil. 
  • Place the rolls on a baking tray and cook for 15 minutes. Turn the rolls and cook for 10 more minutes.


Ho lottato molto con ansia e depressione nel 2017. Pensavo di esser riusciva a lasciarmi tutto alle spalle ma a quanto pare non ci sono riuscita. Mi sento bloccata, come se non stessi andando da nessuna parte. Ho 24 anni e so che molto di voi diranno che sono ancora giovane, ma sono veramente così giovane? Non sono ancora riuscita a trovare un lavoro, non ho una relazione che di per se non di da fastido se non fosse per quelle persone che non fanno altro che farmelo notare, e il futuro sta iniziando a terrorizzarmi. Molto.

A quello, aggiungete il fatto che ultimamente niente sembra andare per il verso giusto. Dopo quella terribile litigata con mia madre --alla fine abbiamo fatto pace ma ho comunque trascorso metà del mio compleanno e il giorno dopo a piangere-- sono arrivati altri problemi di salute. Come se non avere il ciclo da due anni ed esser diventata intollerante al glutine non fossero abbastanza.

Domenica 8 il mio palmo sinistro ha iniziato a farmi un po' male. Non gli ho dato tanto peso all'inizio ma poi e peggiorata e, lunedì, ha iniziato a formicolare e anche la mano destra si è unita alla "festa". Pensavo fosse il Fitbit (lo comprato in quel fine settimana) così l'ho tolto. Il dolore non è migliorato e ho iniziato anche ad avere i brividi. Giovedì, anche il mio braccio sinistro ha iniziato a formicolare e poi anche le gambe. Il dolore era così forte che praticamente ho pianto tutto il giorno. Così sono andata dal dottore e viene fuori che ho la cervicale e i muscoli del collo infiammati. Va un po' meglio ora, ma le mani ancora mi fanno male di tanto in tanto.

Poi domenica, il mio computer ha iniziato a delirare e mi ha fatto impazzire per gli ultimi tre giorni. E questa mattina, mentre stavo fotografando questi involtini, ho bruciato lo spezzatino di manzo che dovevo mangiare domani per pranzo. Per fortuna sono riuscita a salvarne la maggior parte. Per non parlare del fatto che ho dovuto usare due banane perché la metà di entrambe era piena di ammaccature.

E ora la buona notizia, il blog ha compiuto due anni. In realtà, li compie oggi e dato che si chiama Inglourious Bananas ho deciso di festeggiare con una ricetta a base di banane, questi involtini di banana. Sono senza glutine (e vegani), molto semplici da fare e altrettanto veloci. Non hanno un aspetto meraviglioso perché la banana è diventata molto morbida in cottura, ma il sapore è ottimo.

INGREDIENTI
2 porzioni
  • 1 banana
  • 2 fogli di riso
  • 1/2 cucchiaino di sciroppo d'acero
  • Cannella in polvere
  • Burro o olio di cocco, fuso

PROCEDIMENTO
  • Preriscaldate il forno a 230°C.
  • Tagliate la banana a metà, poi rivestitela con lo sciroppo d'acero.
  • Riempite una larga ciotola con acqua tiepida. Mettete i fogli di riso nell'acqua, un foglio alla volta, e teneteli a bagno finché saranno morbidi, circa 10 secondi.
  • Disponete il foglio di riso su una superficie liscia e piana, cospargete con un po' di cannella e mettete metà banana da un lato. Piegate il fondo, poi i lati e infine la parte superiore. Ripetete per l'altro involtino.
  • Spennellate gli involtini su entrambi i lati con burro o olio di cocco fuso.
  • Mettete gli involtini su una teglia e cuocete per 15 minuti. Girate gli involtini e cuocete per altri 10 minuti.
