Herbed Quinoa and Lentils with Maple Balsamic Oyster Mushrooms // Quinoa e lenticchie alle erbe con funghi ostrica allo sciroppo d'acero e aceto balsamico

Just like I did last year, I went to Lucca for the Lucca Comics last Saturday. I love cosplays and the city is very beautiful, but what I look forward the most when I travel is food. I'm obsessed with food and I always try to eat typical dishes. Among the many things I ate, I had tagliatelle with Porcini mushrooms, a terribly executed dish with overcooked mushrooms drowned in oil. This quinoa and lentils with oyster mushrooms is my way to clear mushroom's name.

Unfortunately, I'm out of luck and Porcini (or wild) mushrooms are nowhere to be found where I live so I had to settle with oyster mushrooms. Of course, they are no Porcini so I had to find a way to make them step out and maple syrup and balsamic vinegar was the answer. The savoury flavour of oyster mushrooms combines beautifully with the sweetness of the syrup and acidity of the vinegar.


As much as I'd love to eat these mushrooms all day long, they are not very filling so I served them with a warm salad of quinoa and lentils seasoned with fresh herbs and it was sensational.


INGREDIENTS
1 serving
  • 60 g (1/3 cup) quinoa
  • 45 g (1/4 cup) dried lentils
  • 1 sprig rosemary
  • 1 sprig thyme
  • 1 spring parsley
  • 1/8 red onion
  • 4 big oyster mushrooms
  • 1/2 tablespoon maple syrup
  • 1 teaspoon balsamic vinegar
  • 1 tablespoon lemon juice
  • 1/2 tablespoon + 1 teaspoon extra virgin olive oil (divided)
  • Salt
  • Pepper

INSTRUCTIONS
  • Rinse the quinoa, add it in a pot with 160 ml (2/3 cup) of water and bring to a boil. Cover and cook on low for 10-15 minutes, until quinoa is cooked and water is absorbed. Let rest for 5-10 minutes, then fluff with a fork.
  • Rinse the lentils, add them in a pot with 120 ml (1/2 cup) of water and bring to a boil. Cook, uncovered, for 20-30 minutes, until lentils are soft, adding more water when needed. Lentils have to be barely covered. Drain any excess water.
  • Meanwhile, wash and pat dry the herbs. Mince them. Finely chop the onion. Clean the mushrooms and hand-chop them.
  • In a small bowl, combine maple syrup, balsamic vinegar and 1 teaspoon of olive oil.
  • Heat a pan on medium heat, add mushrooms, season with salt and cook for 6-8 minutes, until there's no more water in the pan. Pour the maple mixture and cook for about 1 minute.
  • In a bowl, combine quinoa, lentils, herbs and onion. Season with salt, pepper, lemon juice and remaining olive oil. Serve with the mushrooms.

Proprio come lo scorso anno, sono andata a Lucca per il Lucca Comics lo scorso sabato. Adoro i cosplay e la città è molto bella, ma quello che mi interessa maggiormente quando viaggio è il cibo. Sono ossessionata con il cibo e cerco sempre di mangiare i piatti tipici. Tra tutte le cose, ho mangiato delle tagliatele ai funghi porcini, un piatto terribilmente eseguito dove i funghi erano stracotti e affogati in olio. Questa quinoa e lenticchie con funghi ostrica è il mio modo per ripulire il nome dei funghi.

Purtroppo ho terminato la fortuta e i funghi porcini (o selvatici) non si trovano più dove vivo così mi sono dovuta accontentare con i funghi ostrica. Ovviamente, non sono i porcini quindi ho dovuto trovare un modo per esaltarli e sciroppo d'acero e aceto balsamico è risultata essere la risposta. La sapidità dei funghi ostrica si abbinano molto bene con la dolcezza dello sciroppo e l'acidità dell'aceto.

Per quando mi piacerebbe mangiare questi funghi tutto il giorno, non sono molto sazianti così l'ho serviti con un'insalata tiepida di quinoa e lenticchie aromatizzata con erbe fresche ed era sensazionale.

INGREDIENTI 
1 porzione
  • 60 g di quinoa
  • 45 g di lenticchie
  • 1 rametto di rosmarino
  • 1 rametto di timo 
  • 1 rametto di prezzemolo
  • 1/8 di cipolla rossa
  • 4 funghi ostrica grandi
  • 1/2 cucchiaio di sciroppo d'acero
  • 1 cucchiaino di aceto balsamico
  • 1 cucchiaio di succo di limone
  • 1/2 cucchiaio + 1 cucchiaino di olio extravergine di oliva (divisi)
  • Sale
  • Pepe

PROCEDIMENTO
  • Sciacquate la quinoa, mettetela in una pentola con 160 ml di acqua e portate a bollore. Coprite e cuocete su fiamma bassa per 10-15 minuti, finché la quinoa è cotta e l'acqua è stata assorbita. Fate riposare per 5-10 minuti quindi sgranate con una forchetta.
  • Sciacquate le lenticchie, mettetele in una pentola con 120 ml di acqua e portate a bollore. Cuocete, senza coperchio, per 20-30 minuti, finché le lenticchie sono morbide, aggiungendo altra acqua quando necessario. Le lenticchie devono essere coperte appena. Scolate l'acqua in eccesso.
  • Nel frattempo, lavate e asciugate le erbe. Tritatele. Tagliate finemente la cipolla. Pulite i funghi e spezzettateli con le mani.
  • In una ciotolina, unite sciroppo d'acero, aceto balsamico e 1 cucchiaino di olio di oliva. 
  • Scaldate una padella su fiamma media, aggiungete funghi, salate e cuocete per 6-8 minuti, finché non c'è più acqua nella padella. Versate il composto di acero e cuocete per circa 1 minuto.
  • In una ciotola, unite quinoa, lenticchie, erbe e cipolla. Salate, pepate e condite con succo di limone e olio di oliva rimasto. Servite con i funghi.

  1. Di solito i pleuretos o funghi ostrica li faccio sempre alla griglia con una salsina al prezzemolo ma mi attira provare cosi. Grazie e buona giornata.
