Chili con carne

The only thing that comes to mind to most Italians when they think about food from the States is junk food. Hamburger, hot dogs and fries. Fast food, basically. And steaks. They completely ignore all the delicious foods they have to offer. Just think about Creole and Cajun cuisine. Or Texas cuisine that has to offer one of the most delicious meat-based dishes I've ever eaten, Chili con carne.

And guess what are the main ingredients? Beef and chili peppers. 

And a lot of controversies. I've done some research and basically I did all wrong. A die-hard Texan will tell you that there's no tomato in Chili. That you have to use diced beef, not ground. That you have to used whole dried chilis then rehydrated. And that one does not add beans into a Chili.


So the version I'm sharing with you today, my version, isn't the hardcore Texan Chili but the Chili most people around the world know and love. It's very easy to make, it's delicious and the beans make it very hearty.

INGREDIENTS
1 serving
  • 100 g (3.5 oz) ground beef
  • 40 g (1/4 cup) dried kidney beans
  • 1 tomato*
  • 1/2 onion
  • 1 small garlic clove
  • 1/4 red bell pepper
  • 70 g (1/4 cup) tomato sauce
  • 1 bay leaf
  • 1 sprig fresh cilantro
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cumin powder
  • 1/4 fresh chilli pepper
  • 1/2 tablespoon extra virgin olive oil
  • 30 ml (2 tablespoons) beef or vegetable broth
  • Salt
  • Pepper

INSTRUCTIONS
  • Soak the beans overnight. Rinse and drain them. Add them in a pot with cold water and the bay leaf and bring to a boil. Cover and cook for 1 hour. Drain them. 
  • Meanwhile, using a knife, make an "x" on the tomato. Bring to a boil a pot of water, add the tomato and cook for 30-60 seconds. Drain and let cool down. Remove skin then dice it. 
  • Thinly slice the chilli pepper, dice the bell pepper, finely chop the onion and mince the garlic. Mince the cilantro.
  • Heat the oil in a pot over medium heat, add the onion and cook for 2-3 minutes, until translucent. Add garlic, fresh chilli and cook for 30 seconds. Add the meat, turn up the heat and cook, stirring, for 3-4 minutes. Add diced tomato, tomato sauce, bell pepper, cumin, paprika and cilantro, and stir. 
  • Pour the broth, season with salt and pepper, and bring to a boil. Reduce the heat, cover and simmer for 1 hour, stirring occasionally and adding more water when needed.
  • Add the beans and cook for 10 minutes, uncovered, adding a little more water if it looks too dry. Adjust salt and pepper, if needed.
  • Serve, to taste, with freshly chopped cilantro and/or sour cream. 

NOTES
  • Alternatively, you can use canned tomatoes. 


L'unica cosa che viene in mente alla maggior parte degli italiani quando pensano al cibo degli Stati Uniti è il cibo spazzatura. Hamburger, hot dog e patatine. Fast food, in poche parole. E le bistecche. E vengono completamente ignorati tutti i gustosi piatti che hanno da offrire. Basti pensare alla cucina creole o cajun. O alla cucina texana che ha da offrire uno dei piatti a base di carne più buoni che abbia mangiato, il chili con carne.

E indovinate un po' quali sono gli ingredienti principali? Manzo e peperoncino.

E tante controversie. Ho fatto delle ricerche e a quanto pare ho sbagliato tutto. Un vero Texano vi dirà che non c'è pomodoro nel Chili. Che si usa carne a pezzi, non macinata. Che si utilizzano peperoncini secchi interi poi reidratati. E che non si aggiungono fagioli nel Chili.

Dunque questa versione che condivido oggi con voi, la mia versione, non è il vero Chili texano ma il Chili come lo conosce e ama la maggior parte del mondo. È molto semplice da fare, è delizioso e i fagioli lo rendomo super saziante.

INGREDIENTI
1 porzione
  • 100 g di manzo macinato
  • 40 g di fagioli kidney secchi
  • 1 pomodoro*
  • 1/2 cipolla
  • 1 spicchio di aglio piccolo
  • 1/4 di peperone rosso
  • 70 g di passata di pomodoro
  • 1 foglia di alloro
  • 1 rametto di coriandolo fresco
  • 1/4 cucchiaino di paprica affumicata
  • 1/4 cucchiaino di cumino in polvere
  • 1/4 di peperoncino fresco
  • 1/2 cucchiaio di olio extravergine di oliva
  • 30 ml di brodo di manzo o vegetale
  • Sale
  • Pepe

PROCEDIMENTO
  • Mettete in ammolo i fagioli durante la notte. Sciacquateli e scolateli. Aggiungeteli in una pentola con acqua fredda e la foglia di alloro e portate a bollore. Corpite e cuoete per 1 ora. Scolateli.
  • Nel frattempo, con un coltello, incidete una "x" sulla superficie del pomodoro. Portate a bollore una pentola di acqua, aggiungete il pomodoro e cuocetelo per 30-60 secondi. Scolatelo e lasciatelo raffreddare. Togliete la pelle quindi tagliatelo a pezzi.
  • Affettate finemente il peperoncino, spezzettate il peperone, tritate finemente la cipolla e l'aglio. Tritate il coriandolo.
  • Scaldate l'olio in una pentola su fiamma media, aggiungete la cipolla e cuocete per 2-3 minuti, finché è trasparente. Aggiungete aglio, peperoncino fresco e cuocete per 30 secondi. Aggiungete la carne, alzate la fiamma e cuocete, mescolando, per 3-4 minuti. Aggiungete pomodoro spezzettato, passata di pomodoro, peperone, cumino, paprica e coriandolo, e mescolate.
  • Versate il brodo, salate e pepate, e portate a bollore. Riducete la fiamma, coprite e cuocete per 1 ora, mescolando di tanto in tanto e aggiungendo altra acqua quando necesario.
  • Aggiungete i fagioli e cuocete per 10 minuti, senza coperchio, aggiungendo un po' di acqua se sembra troppo asciutto. Aggiustate di sale e pepe, se necessario.
  • Servite, a piacere, con coriandolo fresco e/o panna acida.

NOTE
  • In alternativa, potete utilizzare i pelati.

  1. Questo piatto io l'adoro e di solito uso i fagioli con l'occhio oppure quelli piccoli quasi neri che trovo in Austria. La faccio sia con solo pomodoro che con i fagioli ma sempre carne macinata ma me la faccio macinare grossa. Ottimo questo prendo nota. Buona serata,
